GRANDMA MAGGIO'S SPAGHETTI SAUCE
This is one that was recited to me out of memory alone, and described as a hand of garlic, etc., though the ingredient quantities should be accurate. I encourage buying the cheapest versions of these ingredients you can find; it will feed an army for about $15 without ruining the taste. You should add more seasonings based on preference. A great vegetarian sauce, and with meatballs...it makes great meatball sandwiches.

Steps:
- Heat olive oil in a large saucepan over medium-low heat, and cook and stir the onion and garlic until translucent but not browned, 6 to 7 minutes. Stir in the mushrooms and basil, and cook and stir until the basil is wilted and the mushrooms are cooked through and have given up their juices, about 10 minutes.
- Pour in the whole peeled tomatoes, and bring the mixture to a boil, stirring and chopping the tomatoes into pieces with a spoon. Pour in the tomato sauce and stir, crushing any large pieces of tomato left, and bring to a simmer. Let the sauce simmer until slightly thickened and bubbling, stirring occasionally, about 15 minutes.
- Stir the tomato paste into the sauce, and fill the empty tomato paste can with Merlot wine, stirring to dissolve any remaining tomato paste in the can. Pour the Merlot wine into the sauce, and stir well to combine. Bring the sauce back to a simmer, and stir in the salt, pepper, dried oregano, and sugar. Let the sauce simmer until the seasonings are blended and the sauce is heated through, about 3 more minutes.

Steps:
- In a frying pan heat olive oil; add onion and the garlic. Saute until brown and remove the garlic.
- Put the canned tomatoes and the liquid from the can in a blender and mix gently, less than a minute.
- Slowly pour the tomatoes into the frying pan. Be very careful because the liquid on the oil has a tendency to explode. Let this simmer for about 15 minutes. Add the seasoning, stirring well.
- In the meantime, put 3 tablespoons of salt into a 4 quart pot of water and bring to a boil. When the sauce is almost ready, put the spaghetti into the boiling water. Stir occasionally and when the spaghetti is almost done, pour in a colander and immediately transfer to a heated platter.
- Pour the sauce over the the pasta and mix a little with 2 forks. Sprinkle with some chopped parsley and serve. Sprinkle with cheese,if desired, on top.

- Preheat oven to 400 °. Nip off a slice off the top of the bulb of garlic to reveal most of the garlic cloves. Place on square of foil on baking sheet and drizzle the olive oil over the tops of the garlic cloves. Sprinkle with a little kosher salt.
- Roast for 20-25 minutes until golden and soft. Allow to cool for about 10 minutes, then using a paper towel, hold the garlic bulb upside down over the foil and squeeze the bulb from the bottom up, pushing the garlic cloves out. Most will pop out, some might need to be encouraged or pulled out. Remove any of the papery garlic skin and set aside.
- Drizzle oil into large, heavy bottomed pot and heat over medium heat. If not using roasted garlic, toss in minced garlic and stir until golden, careful not to burn. Scoop the tomato paste into the hot oil (garlic) and stir around until you see the color darken slightly, don't allow to burn.
- Pour in the pureed and crushed tomatoes, next, pour one or two whole tomatoes at a time in your hand, squeezing and crushing them into the sauce. Pick one of the empty 28 oz cans and fill ½ way with water, swirling around to remove leftover tomato juice, then pour into the next can and the next until you've cleaned out all of the cans. Don't throw out. Pour tomato "water" with collected juices into the sauce, stir to combine.
