BEEF STROGANOFF SANDWICHES

- Preheat broiler. In a large skillet, cook beef, mushrooms, pepper and onion over medium-high heat until beef is no longer pink, breaking up beef into crumbles, 8-10 minutes; drain. Stir in dip mix and sour cream., Cut French bread horizontally in half; place halves on a baking sheet, cut side up. Broil 3-4 in. from heat until lightly toasted, 1-2 minutes. Remove from broiler., Spoon beef mixture over bread. Sprinkle with cheese. Broil until cheese is lightly browned, 1-2 minutes longer. To serve, cut each into 3 pieces.

- In a skillet, brown ground beef and onion. Drain. Add salt, garlic powder and pepper. , Cut bread lengthwise in half; butter both halves and place on baking sheets. Remove meat mixture from heat; stir in sour cream. Spoon onto the bread. Sprinkle with tomatoes, green pepper and cheese. , Bake at 350° for 20 minutes or until the cheese is melted (bake longer for crispier bread).

SLICED STEAK STROGANOFF IN FRENCH BREAD AND DILL RELISH DRESSED SALAD

- Chop watercress and reserve.
- Cut baguette into 4 pieces and split but do not separate.
- Heat a large skillet over medium to medium high heat with 2 tablespoons extra-virgin olive oil and butter.
- Pat sliced meat dry. Season the meat with salt and pepper and coat in flour. Shake off excess then add to very hot pan. Grate the onion directly into the meat. Cook meat 5 to 6 minutes, turning occasionally. Add stock to pan and cook to thicken 1 minute, stir in sour cream, a tablespoon of lemon juice and dill. Season the sauce with pepper. Remove from heat. Pile meat into cut baguette and top with cress.

- 1. Mix together your first 7 ingredients and sautée until browned.
- 2. Add sour cream.
- 3. Cut bread loaves in half lengthwise and butter.
- 4. Toast slightly.
- 5. Spread hamburger mixture on top.

Steps:
- Preheat oven to 350 degrees F.
- Slice the bread in half lengthwise, then lightly butter the bread and wrap in foil.
- Bake at 350 degrees F for 15 minutes.
- Brown the ground beef and drain the excess fat.
- Add the onion, and cook until the onion is transparent.
- Remove from the heat and add the sour cream, worcestershire sauce, salt and pepper.
- Remove the bread from the oven and spread the meat mixture on each half.
- Arrange the chopped tomatoes and chopped bell pepper on top of the meat mixture and top with the grated cheese.
- Place back in the oven and bake only until the cheese is melted.
- Serve hot.
- Note: sauteed sliced mushrooms would also be good in this!

- Preheat oven to 400 degrees. Spray a rimmed baking sheet with non-stick cooking spray. Place bread loaves on the the baking sheet and scoop out some of the bread, leaving room for the filling. Set aside.
- In a large Dutch oven preheated to medium-high, add the olive oil and mushrooms. Saute the mushrooms until slightly golden brown, about 3 minutes, and then add 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Continue to cook the mushrooms until they're golden brown, another 2-3 minutes. Use a slotted spoon to remove the mushrooms and set aside.
- Turn the heat to medium and melt the butter in the same Dutch oven. Once the butter has melted, add the onion, garlic, 1/2 teaspoon salt, and 1/2 teaspoon pepper. Saute the veggies until they are softened, about 3-4 minutes. Add the ground beef and use a wooden spoon to bread them meat up, cook until beef is no longer pink, about 5 minutes. Add the cooked mushrooms back in and stir to combine.
- Add the flour and paprika to the beef mixture and stir, cook until the flour has cooked out, about 1 minute. Pour in the beef broth and stir to combine. Bring everything to a boil and then reduce to a simmer. Simmer the mixture for about 10 minutes until thickened. Remove from heat and stir in mustard and sour cream.
