Homemade Pear Pie image

Steps:

  • In a large bowl, mix flour and salt; cut in shortening until crumbly. Gradually add water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap and refrigerate 1 hour or overnight., Preheat oven to 425°. In a large bowl, toss pears with lemon juice. In a small bowl, mix flour, 1/2 cup sugar and cinnamon; add to pear mixture and toss to coat., On a lightly floured surface, roll half of dough into an 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust even with rim. Add filling; dot with butter., Roll remaining dough to a 1/8-in.-thick circle. Place over filling. Trim, seal and flute edges. Cut slits in top. Sprinkle with remaining sugar. Bake until crust is golden brown and filling is bubbly, 45-50 minutes. Cover edges loosely with foil during the last 20 minutes if needed to prevent overbrowning. Remove foil. Cool on a wire rack.

Fresh Pear Pie image

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Place a baking sheet on the bottom oven rack.
  • Combine sugar, flour, salt, cinnamon, and lemon zest in mixing bowl. Roll out half the pastry and line a 9-inch pie pan.
  • Arrange pear slices in layers in the pastry-lined pan, sprinkling the sugar mixture over each layer. Dot with butter and sprinkle with lemon juice.
  • Roll out remaining dough for the top crust. Use your finger dipped in a small bowl of water to moisten the rim of the bottom crust. Place top crust over filling, and trim edge using kitchen shears or a sharp paring knife. Fold edge under bottom crust, pressing to seal. Flute edge. Cut slits in top crust to allow steam to escape.
  • Bake in the preheated oven on the baking sheet for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and bake until crust is golden brown and filling is bubbly, 35 to 40 minutes longer. Allow to cool several hours before serving.

Steps:

There aren't many recipes using fresh pears. I heard this recipe on the radio while I was driving the tractor in the field. I kept repeating the ingredients over and over until it was time to go in the house for lunch, then I wrote the recipe down on paper. We've enjoyed it every summer since.

Fruit pies always make a good dessert, I think. Based on the reviews, I don't think any changes are necessary for this adopted recipe. The reviewer's suggestion of lemon juice instead of orange juice is a great idea if you're like me and always have lemons or lemon juice but rarely keep orange juice in the house.

Steps:

  • Combine the pears, orange juice concentrate and lemon rind in a bowl and toss lightly.
  • Arrange the pear mixture in the unbaked pie shell.
  • Prepare the Spicy Crumb Topping (instructions below) and sprinkle over the pear mixture.
  • Bake in a preheated 400 degree F. oven for 40 minutes or until the pears are tender.
  • Cover loosely with aluminum foil after 30 minutes if the top becomes too brown.
  • Cool on a wire rack before serving.
  • SPICY CRUMB TOPPING:
  • Combine the flour, sugar, spices and salt in a bowl.
  • Cut in the margarine, using a pastry blender, until the mixture is crumbly.

  • Begin by putting water in a bowl. Squeeze in juice from half lemon and set aside. Next peel the pears, cut them into quarters, remove the core and soak them in the bowl with lemon water. You're are simply soaking them in water, so that they won't turn brown by the time you'll be using them.
  • Preheat the oven to 180 °C (356 °F), with top and bottom heat. Now put half of the milk and butter in a pot and melt in the oven that you're busy preheating or use a stove and let cool. In two empty bowls separate the eggs. Add a pinch of salt to the bowl with egg whites and beat until light and fluffy. Add flour, the remaining milk, 1 tablespoon vanilla sugar and baking powder to the bowl with egg yolks and beat until creamy. Add milk - butter mixture and whisk. Using a spatula gently fold in egg whites. You want to retain the air in the egg whites.
  • Usinga colander drain the pears that you soaked earlier and scatter themin a greased glass casserole dish. Pour the custard over top and letsit for five minutes. Put the casserole dish in the preheated ovenand bake for 45 minutes. 15 minutes before the end of baking timesprinkle with almond flakes. Immediately after baking sprinkle withthe remaining vanilla sugar. Put the custard back in the oven, closeit and let sit inside for at least 30 minutes. Enjoy.
