ORANGE-GLAZED CARROTS
Rich in vitamins C and A, this nutritional powerhouse doesn't taste like a diet dish. The carrots absorb and become glazed with the buttery juice and dill adds a surprising fresh note at the end.

Steps:
- Cut a 1-inch chunk off one end of a carrot at an angle. Roll the carrot a quarter turn and cut another 1-inch chunk at an angle. Continue rolling and cutting all of the carrots into 1-inch chunks. Combine the carrots and orange juice in a large saucepan. Add enough water to just cover the carrots. Add the butter and 1/4 teaspoon each salt and pepper.
- Bring to a boil, and then reduce the heat to maintain a steady simmer. Cook, stirring occasionally, until the carrots are tender and the liquid has reduced to a glaze, about 20 minutes. Top with the dill and serve.
CARROT SPRITZ
Steps:
- Combine 1 ounce each carrot juice and Aperol in an ice-filled glass. Top with prosecco. Garnish with a baby carrot.

Pour over the orange juice and cook for a further 2-3 mins, bubbling the sauce and stirring to thoroughly coat the carrots. Finally, stir in the chopped parsley and serve.

- If using a juicer, add all ingredients to the juicer and press (omit water). Otherwise, squeeze orange and lemon juice into a blender as the pulp can make the juicing process more difficult.
- Next add nectarine, apple, ginger, carrots, and mint (optional). Top with filtered water (start with the lesser quantity), cover and blend until combined. You don't want your blender to get the juice too hot in temperature so be careful not to over-blend - it shouldn't take more than 30 seconds.
- Drape a clean, thin towel over a large mixing bowl and carefully pour over the juice and pulp. Then gather the corners and begin extracting the juice, leaving the pulp behind. Continue squeezing until all juice is extracted. You can either compost the pulp or add it to baked goods!
- Enjoy the juice fresh. Cover and refrigerate leftovers for 2-3 days, though best in the first 12-24 hours for mineral and vitamin content.
