- In a Dutch oven, saute onion in butter for 3 minutes. Add garlic; cook 1-2 minutes longer or until onion is tender. Stir in the tomatoes, broth, basil, sugar and pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes., Meanwhile, cook the orzo according to package directions; drain. Add orzo and cream to soup; heat through (do not boil). Sprinkle servings with cheese.

- In large saucepan, heat oil over medium heat; saute onion until tender, 3-5 minutes. Add orzo; cook and stir until lightly toasted., Stir in tomatoes, broth and seasonings; bring to a boil. Reduce heat; simmer, covered, until orzo is tender, 15-20 minutes, stirring occasionally. If desired, top with feta and basil. Freeze option: Freeze cooled soup in freezer containers. - In a stockpot, over medium heat, combine the tomatoes, onion, cloves and chicken broth. Bring to a boil, and gently boil for about 20 minutes to blend all of the flavors. Remove from heat and run the mixture through a food mill into a large bowl, or pan. Discard any stuff left over in the food mill.
- In the now empty stockpot, melt the butter over medium heat. Stir in the flour to make a roux, cooking until the roux is a medium brown. Gradually whisk in a bit of the tomato mixture, so that no lumps form, then stir in the rest. Season with sugar and salt, and adjust to taste.

- Heat oil in a large heavy saucepan; stir int he onions, celery, garlic and sage leaves; saute, stirring, ove low heat until the onions are coated with oil.
- Cover and sweat the vegetables over low heat until very soft; 25 minutes.
- Meanwhile place the peeled tomatoes into a sieve set over a bowl. Break tomatoes with hands and squeeze out the juices and seeds.
- Rinse any seeds off the tomato flesh; coarsely chop the tomatoes.
- Press on the pulp left in the sieve to extract as much liquid as possible. Discard seeds. Add the strained juices and the tomato pulp to the onions.
- Add the chicken broth and heat to simmering.
- Just before serving, stir in the orzo; season to taste with salt and pepper.

TOMATO ORZO SOUP
Years ago a friend of mine was a chef at a restaurant on Broadway in Saskatoon called Nino's. He used to make this soup, and I've tried several recipes over the years and they never really tasted close. I fiddled around with what I liked about other recipes and came up with this. Feel free to add more Orzo depending on your tastes, in our house there are hardly any leftovers. The recipe doubles and triples well.

- Cook Orzo Pasta al dente (use sea salt for the best results).
- Put Diced tomatoes and tomato soup in a blender and blend til smooth.
- Put blended mix into pot along with chicken broth, al dente Orzo, Parsley, Basil and Back Pepper.
- Bring to a boil, stir constantly.
- Remove from heat.
- Add Parmesan, stir and serve.
- Enjoy!
