- Melt butter in a large cast-iron or other ovenproof skillet. Add apples and 1/2 cup sugar; stir to mix well. Cover and cook over low heat for 20 minutes or until apples are tender, stirring frequently. , Add cinnamon and remaining sugar. Cook and stir over medium-high heat 5-10 minutes longer. If desired, serve with ice cream.

- Fry bacon until crisp, remove and drain.
- From pan, drain all by 1/4 cup of melted fat.
- Cut apples, cored but not peeled, into 1/2-inch thick round slices.
- Mix flour with sugar and spices.
- Roll apple slices in flour mixture.
- Fry apple in fat until golden brown on both sides and apple is easily pierced and tender.
- Serve hot apple slices with crisp bacon slices.
- Makes 6 servings.

CREAMY CABBAGE WITH APPLES AND BACON
Great winter soul food, terrific with chops or brats. Mildly sweet and sour, this dish smells divine and just makes you feel good. Leftovers, if that's possible, are even better and keep well. Coriander seeds lend just the right mysterious note and a few go a long way. However, any of the herb seeds (mustard, dill, and celery are all good) or combinations thereof are great for variety. This is a rustic dish, so don't fuss with your chopping -- everything, including the bacon, should be in good-sized chunks, about the same size.

- Heat olive oil over medium heat in a large, heavy-bottomed pot or Dutch oven. Add the bacon and cook and stir until most of the fat is rendered, and the bacon is lightly browned but still slightly limp, about 5 minutes. Remove the bacon with a slotted spoon to a small bowl; do not drain. Pour off any excess bacon fat in the pan, according to your taste.
- Stir the onion into the pot, season with salt and pepper, and cook and stir over medium-high heat until onion is translucent. Sprinkle in the sugar, then stir in the vinegar-stand back or you'll get a nose full! Scrape up the delicious brown bits from the bottom of the pan. Add the cabbage, stirring well to combine.
- Cook, uncovered, until cabbage is reduced and starts to soften, 6 to 8 minutes. Stir in apples, stock, and coriander seeds. Cover, reduce heat to medium low, and cook for at least 30 minutes, stirring occasionally. Add more stock as needed, and continue cooking until the cabbage is soft, but not falling apart.
- Just before serving, remove the cover and stir in the bacon with its juices. Cook over medium-high heat until any remaining liquid is reduced to a syrup and the mixture is piping hot, about 5 minutes. Remove from heat, stir in nutmeg, and fold in the sour cream. Your digestive tract will thank you.

BACON APPLES
I cooked apples that I stuffed with brown sugar and cinnamon over a campfire as a dessert for my family when we went camping. In the morning we had bacon with our breakfasts and the kids marinated the bacon in the leftover apples! The bacon was good but we ate the apples after and they where surprisingly good!

- Build a campfire and allow the fire to burn until it has accumulated a bed of coals. Rake the coals into a flat bed on one side of the fire. Alternatively, preheat an outdoor grill.
- Place apples in a loaf pan. Combine brown sugar and cinnamon in a bowl; spoon into each apple.
- Place the loaf pan into the campfire or on the grill; cook for about 3 minutes. Carefully remove the pan from the fire and sprinkle bacon over apples. Place in the fire or on the grill for about 5 minutes more.

- Place a large, heavy-bottomed skillet over medium heat and add the bacon strips. Fry until crisp. Use a slotted spoon to transfer the bacon from the pan to a paper towel lined plate. If there is more than about 1 tablespoon of bacon fat, drain the excess from the pan. If there is under 1 tablespoon, add enough butter to bring the fat up to about 1 tablespoon. Return the pan to the heat and add the apples, onions, and thyme. Toss to coat. Fry, tossing or stirring every so often, until the apples and onions are both tender. Remove the sprig of thyme before serving. Add freshly ground black pepper to taste.
- If you wish to, you can garnish the Bacon Fried Apples and Onions with fresh thyme before serving.
