FRIED CABBAGE CREPES CROQUETTA POLISH RECIPE
Easy on the budget and tasty! My Aunt is from Poland and taught me how to make croquetta, or Krokiety. A simple mixture of cabbage fried in bacon and onions fill the crepes that are then breaded and fried. A different way to serve the humble cabbage. Other ingredients can be added to taste.

Steps:
- 1. Chunk up the cabbage. In a large pot of boiling water, add the cabbage and cook until very tender. Drain and squeeze out as much liquid as possible.
- 2. In a large frying pan, cook bacon until crisp. Drain bacon on paper toweling and save. In the bacon grease, add your chopped onion and cabbage. If mixture gets dry, add some vegetable oil. Saute your mixture until it starts to brown a little. At this point, I use a food processor to blend the cooked cabbage into almost a paste consistency. You can also just chop it up.
- 3. FOR THE CREPES: Mix all ingredients together. Ladle or pour batter into a greased small frying pan tilting and swirling the batter until you get a thin round layer of the batter evenly distributed in the pan. Cook until it starts to look dry and browning around the edges. Flip it over and cook a few minutes more. Set aside on a plate.
- 4. Fill each crepe with the filling. Carefully fold crepe into an envelope to contain the filling.
- 5. Dip each filled crepe into the beaten egg and then plain bread crumbs until it is well coated. In the same large frying pan that you made the filling, wipe out any filling that is left and fill with vegetable oil to about 1/2 inch up the side of the pan. Get the oil nice and hot (a drop of water will dance and sing when the oil is hot enough)
- 6. Fry each crepe a few at a time until golden brown on all sides.
- 7. This recipe can be made in advance up to step 4. When ready to serve, fry the breaded crepes as in step 5. Best served warm and right away.

FRIED CABBAGE AND KIELBASA
This recipe works well for many occasions. This is also the type of recipe that you can add to or build on to make your own. If you aren't too crazy about the taste of cabbage, keep in mind that the onion, bacon drippings, and kielbasa seems to tone down that cabbage-y taste a bit, and you can also add other things or spices to tone it down.

FRIED CABBAGE WITH CARROTS AND PEPPERS
Cabbage is a staple in Gullah cooking, and there's so much more you can do with it than just coleslaw. This simple sauteed cabbage dish is one of my favorite ways to prepare the vegetable, and it's great with just about any protein. Better yet, it's a great dish to serve a large crowd.

Steps:
- Heat a very large cast-iron skillet over medium-high heat. Add the bacon and cook until browned, 5 to 6 minutes. Remove to paper towels, reserving the drippings in the skillet.
- Add additional oil to the pan if needed. Add the onion, carrot and peppers and cook until the vegetables begin to soften, about 5 minutes. Stir in the cabbage and garlic and saute until the cabbage begins to brown, about 10 minutes.
- Stir in the hot sauce and bring to a boil. Cover, then reduce the heat to low and simmer until the cabbage is tender, about 15 minutes. Stir in the reserved bacon, and season with salt and pepper.
FRIED CABBAGE
When I was young, my family grew our own cabbages. It was fun to put them to use in the kitchen, just as I did with this comforting side. With potatoes, deviled eggs and cornbread, fried cabbage tastes like home. -Bernice Morris, Marshfield, Missouri

- Start by making the crepes batter. In a large bowl whisk together the flour and salt then add the egg and oil.
- Gradually and slowly pour in the milk whisking (quite vigorously) all the time until smooth. (If there are any lumps left use a stick blender to get the batter as smooth as possible). Set aside while you make the mushroom filling.
- To make the filling start by heating up 1 tablespoon of oil and gently frying the onion for 3 minutes until softened. Add the mushrooms, salt and pepper and continue cooking until all the moisture has disappeared.
- Add the butter and parsley and cook for a few more minutes until the mushrooms have browned a little. Stir in the ketchup, adjust the seasoning and remove from the heat. Set aside while you make the crepes.

- Fill a large pot half way full with water. Lightly salt it, and over high heat bring the water to a boil.
- Once boiling, pour in the egg noodles, stir, and cook according to the package directions. Transfer the noodles to a colander when done, and drain away all excess water.
- While the noodles are cooking, get started on the cabbage by adding 6 tablespoons of butter to a large Dutch oven set over medium heat.
- Once the butter's melted, stir in the cabbage and onion. Cook the mixture, stirring occasionally, for 15-20 minutes or until the cabbage has browned/caramelized and is tender. Salt, to taste.

- Drain the sauerkraut (drained sauerkraut should weight 1 lb (450g)), combine in a medium pot with dried mushrooms, bay leaves, and allspice berries. Add water, enough to cover the sauerkraut and mushrooms. Cook, partially covered, over medium heat for about 45 minutes or until the sauerkraut is soft.
- Prepare the crepe batter: Simply mix all the ingredients, season the batter with salt and pepper. You can do that with a blender, hand mixer, an immersion blender, food processor, or even by hand (with a whisk). I prefer to mix the batter with a blender – it’s the quickest way to mix the ingredients and the batter is more smooth. If you’ll whisk the batter by hand it will have small lumps, but this is also ok and your crepes will be fine.
- Place about 2 heaped tablespoons of filling on each crepe. Fold it like you would fold a burrito: fold sides into the middle and then roll up the bottom tightly to the top. Some people spread the filling all over the crepe, leaving some border, and then fold them up. It's important to fold them tightly - they will be easier to fry.
