FRIED MUSTARD CUBED STEAKS
These yummy steaks are a cinch to make but look like you fussed. Instead of Dijon, you can use regular mustard, hot-and-spicy mustard or your favorite variety. Recipe was found on the TOH site, submitted by Lori Shepherd.

Steps:
- In a large resealable bag, combine mustard and water; add steaks. Seal bag and turn to coat; let stand for 10 minutes. Drain and discard marinade.
- In a shallow bowl, combine flour, salt and pepper. Dip steaks in this mixture one at a time. In an electric skillet, heat 1/4 inch oil to 375 degrees F.
- Fry steaks, two at a time, for 3-4 minutes on each side or until crisp and lightly browned.

COMFORTING CUBE STEAKS
These steaks are wonderful and easy to make. They also make their own gravy. Wonderful served with rice.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease a 9x13 inch baking dish.
- Season the steaks on both sides with Cajun seasoning and black pepper. Place the steaks into the prepared baking dish. Pour the lemon-lime beverage over them. Combine the cream of mushroom soup and dry onion soup mix, and pour over the steaks.
- Bake, uncovered, for about 1 hour, or until meat reaches desired doneness. Do not open the oven door during the first hour of cooking. Serve steaks with gravy spooned over.

- In a shallow bowl, combine 2 cups flour and seasonings; set aside. In another bowl, combine buttermilk and evaporated milk. Remove 3-1/2 cups for gravy and set aside. Dip cube steaks into buttermilk mixture, then into flour mixture, coating well. Repeat. , In a skillet, heat 1/2 in. of oil on high. Fry steaks, a few at a time, for 5-7 minutes. Turn carefully and cook 5 minutes longer or until coating is crisp and met is no longer pink. Remove steaks and keep warm. , Drain, reserving 1/3 cup drippings in the skillet; stir remaining flour into drippings until smooth. Cook and stir over medium heat for 5 minutes or until golden brown. Whisk in reserved buttermilk mixture; bring to a boil. Cook and stir for 2 minutes. Add Worcestershire sauce and pepper sauce. Serve with steaks.

- In a large resealable plastic bag, combine the flour, salt and pepper. Add steaks, one at a time, and shake to coat. In a large skillet, brown steaks on both sides in oil until no longer pink. Set aside and keep warm. , Add the onion, potatoes and beans to skillet; stir in soup. Return steaks to skillet. Cover and simmer for 15 minutes or until meat is tender. Sprinkle with paprika.

- Prepare Chimichurri sauce. Place all ingredients except olive oil in a food processor, and pulse to blend. In between pulses, scrape sides of the processor bowl down. Transfer to a medium bowl, and whisk in olive oil.
- In a zipper-lock bag, combine the mustard and wine. Add steaks, and toss to mix well. Close bag, and refrigerate for 2 to 4 hours. Remove steaks from marinade and pat dry.
- Combine flour, salt and pepper in a shallow bowl. Heat about ¼ inch of oil in a large skillet over medium-high heat. Dust steaks with flour mixture, and fry in hot oil until golden brown. Drain on paper towels. Serve with a dollop of Chimichurri sauce.
