Steps:
- Peel the plantains and cut them in 1/2 on a bias, then slice in 1/2 lengthwise so you have 4 pieces.
- Heat the oil in a large heavy skillet over medium heat. Fry the plantains until golden on both sides, about 5 minutes per side. Remove to a plate lined with paper towels and sprinkle with salt. Serve with lime wedges.

This is a terrific Cuban side dish or, as we have them, just a snack. You can serve these with rice and beans and entrees of meat or fish. Plantains are becoming more available in grocery stores and they're really tasty!

Steps:
- In a large skillet, melt the butter with the olive oil over medium heat; add the plantain slices and fry for about 4 minutes on each side, moving the slices with a spatula occasionally to prevent sticking.
- Remove the plantains from the skillet with a slotted spoon and let drain on paper towels.
- Transfer to a large, warm serving platter, sprinkle with lemon juice and salt and serve warm.
- *unripeplantains are green and hard, as they ripen they turn yellow and then get mottled with dark spots; Ripe plantains are sweet and soft and are brownish-black in color and resemble overripe bananas; To ripen a plantain, keep them in a warm place until they turn yellow, then brownish-black.

Steps:
- Peel the plantains. Slice each one lengthwise into 4 equal slices.
- In a frying pan, lightly fry the slices on each side until slices are pliable, not brittle.
- Remove the slices and drain on paper towels until cool enough to handle.
- Form each slice into a ring, with ends overlapping about an inch. Secure with toothpicks.
- Stuff each ring with cheddar cheese. Squeeze the cheese together slightly so that it will not fall apart.
- In a bowl, mix together the eggs, salt, flour and water.
- Cover the open ends of the piononos with the flour and egg mix.
- Fry the piononos on each end until it is sealed and golden.

- First, cut the tips of the banana with a sharp knife, then make a slit alongside the plantain from top to bottom and remove the peel. This step is for whole fried bananas or sliced.
- Slice plantain diagonally. As you can see, the top two pictures show a very ripened banana, and in the two pictures at the bottom is a firmer banana that will hold better when slicing.
- Heat oil in a large nonstick frying pan over a medium-high heat. Wait until the oil is hot, but not smoking, and add the bananas. Fry the small slices for 4-5 minutes on each side until golden brown. Remove and place on a plate lined with paper towel to absorb any excess fat.
- Whole fried plantains will take longer to cook. Gently turn them to make sure that every side is cooked completely. They will take about 15-18 minutes to cook. After they’ve been fried, remove and place on a plate covered with paper towels.

- Cut the tips off and peel the ripe plantains, depending on the size you can either cut them in halves before slicing or slice the entire plantain. It does make it easier to slice them if you cut them halves first. Next, cut the plantains into slices that are about ¼ inch thick (or about ½ cm thick).
- Heat the oil in a medium sized skillet or frying pan over medium heat. Add the plantain slices and cook on each side until they start to turn a golden yellow color, the flesh will go from a pinkish or light peach to yellow when they cook. You can turn them only once, though I usually end up turning them a first time, and then if needed giving the ones the need it another turn to get that golden tone.
- Once the plantains are cooked, turn the heat down to very low or completely off, sprinkle the grated mozzarella or quesillo on top, and cover with a lid for a couple of minutes until the cheese melts.
- Use a large spatula to transfer the ripe plantains with melted cheese to a plate and serve immediately. Can be served as is or with a fried egg on top and some aji or hot sauce on the side.
