SKILLET RED POTATOES
When I'm in a hurry to prepare potatoes, I resort to this recipe for skillet potatoes that I created myself. The mix of seasonings is just right and makes a delicious, attractive side dish. It's been a family favorite for a long time and fits with most any meal. -Lois Collier, Vineland, New Jersey

- In a skillet, heat oil over medium heat. Add potatoes; cook for 10 minutes, stirring occasionally. Stir in remaining ingredients; cook and stir until potatoes are browned and tender, about 5 minutes longer.

PERFECT FRIED POTATOES

- Put the potatoes in a large pot of salted water over medium-high heat, bring to a boil and reduce to a simmer. Cook until just fork-tender, 8 to 10 minutes. Drain and transfer to a baking sheet. Let rest for 10 minutes; this will allow the potatoes to steam and release excess moisture.
- In a small bowl, mix the sea salt, pepper, smoked paprika, cayenne and onion powder.
- Fill a large Dutch oven with 2 inches of oil and heat over medium heat to 375 degrees F. Carefully add half the potatoes and fry until golden brown and crisp, 4 to 5 minutes. Right before removing the potatoes, add a sprig of rosemary and half the sliced garlic to the oil and cook for 15 seconds. With a fine-mesh strainer, remove the batch to a medium bowl. Toss with half of the seasoning mix, then transfer to a paper towel-line baking sheet to drain. Repeat with the remaining potatoes, rosemary, garlic and seasoning mix.
CRISP AND SPICY FRIED RED POTATOES
I love everything with a little spicy kick so I make these with my mexican foods as a side. (even though I use cajun spice) You can add as much or as little as you prefer, I like mine spicy! : ) These are simple easy and quick but pack an amazing taste!!

Steps:
- 1. Boil potatos for a few minutes but not all the way through. Just long enough to soften them a tiny bit. Then drain well, careful not to bruise (they should not be really soft) Allow to cool off completely.
- 2. In a large bowl add potatoes and seasoning to taste. I add alot of garlic and cajun spice) and gently toss potatoes till completely covered. Add more seasoning if needed to cover all potatoes.
- 3. In a large skillet heat veg oil and add potatoes. Fry until cooked through and the outsides are browned and crispy.
- 4. Add a few pats of butter to top and gently toss potatoes. Fry a few minutes more.
FRIED RED POTATOES FOR ONE
I just made this for dinner, and thought it was pretty darn good. It's hard to make a side-dish when you are eating alone. And this one is fast and easy.

- Clean potatoes and cook them in the microwave until soft (about three minutes).
- Meanwhile, melt the butter in a frying pan.
- When the potatoes are done, slice them in half and then cube them.
- Put the potato cubes into the melted butter.
- Sprinkle with the season salt, onion and garlic powders.
- Fry until lightly brown and crispy on all sides, about 5 minutes.
- Sprinkle the bacon bits on top and cover with cheese.
- Remove from heat, cover the pan and let it sit until the cheese is melted.
- Enjoy!

- Heat a large skillet over medium heat and add 1 Tbsp butter and 2 Tbsp olive oil. Once butter is melted and hot, arrange potatoes in the skillet, cut-side-down in one layer. Cook uncovered and undisturbed 8-10 minutes or until golden brown crust forms on the bottoms.
- Turn potatoes then cover and cook another 5 minutes or until golden brown on the second side, you'll hear it spit and splatter under the lid; just be careful when you first lift of the lid as juices from the lid can dribble into the pan and splatter. Keep the wee ones away from the stove. In hind sight, a dutch oven with taller walls might have been a better choice to cook these.
- Turn the potatoes again, cover and cook another 5 minutes or until you can easily pierce potatoes with a knife. Remove from heat and sprinkle with salt & pepper (I used about 3/4 tsp salt and 1/8 tsp pepper), toss with 2 Tbsp chives. Sprinkle with more fresh chives just before serving and enjoy.
