- Prepare frozen vegetables according to package directions. Meanwhile, in a large skillet, heat 1 tablespoon olive oil over medium-high heat. Pour in eggs; cook and stir until eggs are thickened and no liquid egg remains. Remove from pan., In same skillet, heat 2 tablespoons sesame oil and remaining olive oil over medium-high heat. Add rice; cook and stir until rice begins to brown, 10-12 minutes., Stir in chicken, salt and pepper. Add eggs and vegetables; heat through, breaking eggs into small pieces and stirring to combine. Drizzle with remaining sesame oil.

- Heat canola and sesame oils in a large, nonstick skillet over medium-high heat. Add carrot and 1/4 cup green onion; cook, stirring constantly, for 2 minutes. Stir in garlic powder and ginger and cook for 2 minutes. Stir in rice, salt, and pepper; cook, stirring only once or twice, until rice is lightly browned, about 5 minutes. Stir in chicken and peas; cook for 2 minutes.
- Push rice mixture to the sides of the pan, creating a circle in the middle. Add butter to the center of the pan. When melted, pour eggs into the center. Cook eggs, stirring often, until almost set, about 3 minutes. Stir eggs into the rice mixture. Stir in soy sauce and rice vinegar; cook for 2 more minutes.
- Serve immediately topped with Sriracha mayo and green onions.

- Heat a wok over medium-high heat for 5 minutes. Add the oil then stir in eggs and fry until just cooked. Once cooked, remove eggs from the wok and set aside.
- Heat up the wok until smoking hot and pour in the oil.
- Add the chicken breast and fry until they are just cooked.
- Add the rice and keep frying until they turn slightly brown.
- Add the vegetables and fry everything together until they are thoroughly cooked.
- Pour in the soy sauce and stir.
- Add the cooked eggs back in and toss them around until they break into pieces.
- Add in the spring onions and serve.

- Beat eggs with a whisk in a small bowl and season with salt and pepper, to taste. Heat very little oil in a medium frying pan over medium heat and make an omelette using half the beaten eggs. Turn out onto a plate to cool (do not fold omelette). Repeat process with remaining beaten eggs. Place 1 omelette on top of the other, fold and coarsely chop. Set aside.
- In a medium bowl, toss chicken strips with the sesame oil and season with salt and pepper, to taste. Heat 3 tablespoons vegetable oil over high heat in large frying pan or wok and stir-fry the prepared chicken strips until lightly golden, about 2 to 3 minutes. Add the onion and garlic and stir-fry for 1 to 2 minutes or until onion has softened. Add 2 tablespoons more vegetable oil and when hot, stir in the cooked rice and green onions, tossing and mixing thoroughly until very hot. Sprinkle with soy sauce and mix evenly. Remove from heat and stir in chopped cooked egg. If desired, garnish with additional sliced green onions.

- Add the canola oil and 1 tablespoon sesame oil to a large nonstick saute pan. Whisk the eggs in a small bowl and season with the salt and some pepper; set aside. Add the ginger, carrot and garlic to the pan and cook until the vegetables have softened slightly, about 2 minutes. Add the rice, peas and the white and light green parts of the scallion. Then, add the soy sauce and remaining 1 tablespoon sesame oil and toss to coat. Press the rice mixture gently into the pan and fry until it begins to crisp on the bottom, 3 to 4 minutes. Add the eggs to the pan and cook, stirring gently, until just set, about 1 minute. Stir in the chicken and cook until heated through, about 1 minute. Transfer to a serving platter and sprinkle with the reserved scallions.
CHICKEN FRIED RICE
This is a recipe I make at home for my three daughters. It's a amazing way to use leftover rice and to turn a Chinese classic into a vehicle for spring ingredients. This fried rice boasts an incredible collection of green vegetables while playing off the magical combination of garlic, onion, scallion, and ginger.

- For the rice: Add the rice and water to a small saucepan over low heat; bring to a simmer with the lid on, 6-7 minutes. Cook an additional 8-10 minutes with the lid on to steam slowly; when rice is done, remove from heat and set aside.
- Blanch the vegetables: Bring a pot of water to a boil and add 3 big pinches of salt; fill a large bowl with ice water. Add the English peas to the simmering water for 10 seconds, then remove to the ice bath with a slotted spoon. Blanch the sugar snap peas in the same manner. The asparagus and green beans will each take about 3-4 minutes to blanch. Remove all of the vegetables from the ice water and set aside.
- Trim and discard the dark green part of the scallion and remove outermost layer of the remaining section. Peel the piece of ginger with a spoon and mince as finely as possible; set aside. Mince the onion and set aside. Mince the garlic and add to the ginger. Slice the scallion into thin rounds and add to the onion. Peel the carrot, slice into thin rounds, and set aside. Now cut the blanched vegetables so they are the same size. On a separate cutting board, dice the chicken into bite-sized pieces, removing any pieces of cartilage or bone; set aside.
- Place the wok over medium-high heat and add a splash of sesame oil to heat. Meanwhile, crack the eggs into a bowl and beat them. When the oil is hot, add the chicken and cook through, 3-4 minutes. Add the garlic and ginger to the chicken and cook 1 more minute, stirring constantly to prevent burning. Add the onion and scallion, followed by the carrot, and cook for 1-2 minutes. Add soy sauce and stir to marry the flavors; add the eggs, stirring so they can cook and break up into pieces. Then fold in the rest of the vegetables. Once the egg has finished cooking, taste and season with more soy sauce and sesame oil, and add the sesame seeds.
- Add the rice and stir well to combine. Serve on a large platter, finish with additional sesame seeds, and eat while hot.
CHICKEN FRIED RICE

- Heat a splash of oil in a large frying pan and tip in the beaten eggs. Swirl the pan to coat in a thin layer of egg and cook for a few mins until set. Tip onto a chopping board, roll up, slice thinly and set aside.
- Heat a little more oil, add the stir-fry veg, curry powder and sweetcorn with a splash of water. Cook for 1-2 mins until the veg starts to wilt, then tip into a bowl. Add the last of the oil to the pan, tip in the rice and chicken, mix well, then add the soy sauce, sweet chilli, ketchup, a splash of water and some black pepper.
- Finally, add the eggs and the veg, toss together and heat through until hot. Tip into bowls and serve immediately.
