BEST-EVER BEER CHEESE SOUP

- In a large stockpot, melt the butter over medium heat. Add the carrots, peppers and 1/2 teaspoon salt and cook, stirring, until the vegetables are soft, about 5 minutes. Add the flour and cook, stirring, until well incorporated, about 5 minutes more.
- Add the chicken stock, beer and half-and-half and cook, whisking often, at a very slow simmer over medium-low heat for 15 minutes.
- Add the cheddar to the soup by the handful, whisking each batch until smooth. Add the Worcestershire, hot sauce, 1/2 teaspoon black pepper, the nutmeg, mustard and lemon juice, and stir to combine.
- Puree the soup in batches in a blender (holding a thick towel over the lid to prevent overflow) until very smooth.
- Just before serving, reheat the soup until steaming and taste for seasoning, adding salt as necessary. Ladle the soup into bowls and garnish each bowl with a swirl of mustard oil, a dollop of goat cheese and a sprinkle of thyme.
GOUDA-AND-BEER FONDUE BREAD BOWL
This delicious fondue is served in a bowl that you can also eat once the fondue is gone. For heartier fare, serve the fondue with pieces of cooked bratwurst as well as the bread and fruit.

- Preheat the oven to 350 degrees F.
- To make the bread bowl, slice off the top 1/4 of the bread with a serrated knife and set aside. Hollow out the loaf by cutting a circle around the inside of the bread leaving a 1-inch border. Pull the soft bread out with your hands, making sure to leave about a 1-inch border at the bottom of the bowl as well. Cube the bread you removed and set it aside for dipping.
- Place the bread bowl on a baking sheet and place in the oven until it is heated through and golden on the inside, about 30 minutes.
- Meanwhile, to make the fondue, combine the Gouda and Emmentaler cheeses with the cornstarch in a medium bowl. Toss with your fingers until the cheese strands are coated.
- Combine the beer and 1 tablespoon of the lemon juice in a medium non-reactive saucepan over medium heat until it is steaming but not simmering, 2 to 3 minutes. Add the cheese in large handfuls, stirring with a wooden spoon. Continue cooking and stirring until all the cheese is melted, about 5 minutes. Once smooth, stir in the mustard and the remaining 1 tablespoon lemon juice. Season with salt.
- Remove the bread bowl from the oven and let it cool slightly, about 5 minutes. Rub the inside all over with the cut sides of the garlic clove. Pour the hot fondue into the warm bread bowl. Serve with the apples, pears and the reserved bread cubes.
BEER GOUDA SOUP

Steps:
- 1. Melt 1 tsp butter in large sauce pan over medium heat, add sweet onion and cook until softened (4 minutes)
- 2. Stir garlic into onion; cook and stir until garlic is fragrant (about a minute)
- 3. Pour beer into pan, bring to simmer and cook until onion is tender (10 minutes)
- 4. Stir chicken broth into beer mix, boil. Stream milk into saucepan while stirring to form base of soup.
- 5. Heat 14 cup butter in microwave until melted (30-60 seconds)
- 6. Stir flour into butter until mix binds into roux, pour into soup.
- 7. Cook and stir soup until it begins to simmer and thicken. (7-10 minutes)
- 8. Remove from heat.
- 9. Melt Gouda cheese into soup, handfuls at a time stirring until liquid is smooth.
- 10. Season with pepper. Garnish with chives and Mexican cheese and croutons (if desired.
WISCONSIN NATIVE'S BEER CHEESE SOUP
As a Wisconsin native, I'm accustomed to a fantastic beer cheese soup. This is the recipe I've created, as a salute to my home state...America's Dairy land...and a state that brews a mighty fine beer! Serve with lots of popcorn floating on top!

- In a large saucepan over medium heat, stir together carrots, onion, celery, and garlic. Stir in hot pepper sauce, cayenne pepper, salt, and pepper. Pour in chicken broth and beer; simmer until vegetables are tender, about 12 minutes. Remove from heat.
- Meanwhile, heat butter in a large soup pot over medium-high heat. Stir in flour with a wire whisk; cook, stirring until the flour is light brown, about 3 or 4 minutes. Gradually stir in milk, whisking to prevent scorching, until thickened. Remove from heat, and gradually stir in cheese. Keep warm.
- Stir beer mixture into cheese mixture. Stir in Dijon mustard, Worcestershire sauce, and dry mustard. Adjust for hot pepper sauce. Bring to a simmer, and cook 10 minutes. Serve topped with popcorn.

- Shred the cheese from a block, measure out the half and half. Let them sit out at room temperature.
- Cut the bacon into 1-inch squares with kitchen shears. Cook in a large pot over medium-low heat, rotating occasionally. Remove and set aside once crisp. Leave 2 Tablespoons of drippings in the pot and add 2 Tablespoons of butter.
- Slice the onion into squares about ¾ of an inch thick, thicker than you normally would for soup. We’re going to caramelize them down and they’ll shrink down in size. If they’re diced too small they will burn.
