SPINACH FRITTATA
Steps:
- Preheat the oven to broil.
- In a medium bowl, whisk together the eggs, milk, salt and pepper until smooth. Fold in the cheese and tomatoes and set aside.
- In a 9-inch, oven-safe nonstick frying pan over medium heat, melt the butter. Add the onion and saute until softened, about 5 minutes. Add the spinach and cook until wilted, about 2 minutes. Pour the egg mixture over the spinach, and cook until almost set, 2 to 4 minutes.
- Transfer the pan to the oven and broil until golden brown on top, 5 to 7 minutes. Remove from the oven and turn out onto a serving plate.

- In medium bowl, beat eggs and milk with wire whisk. Stir in cheese, garlic powder, basil, salt, pepper and onions.

- In a medium dice, Dice the bacon, and cook until Semi-Crisp
- Small dice potatoes & onion and cook in bacon fat until browned.
- Beat the eggs thoroughly, add the Drained spinach and 1 cup of Mozzarella and beat until combined and evenly distributed (Saving the other 1/4 cup)
- On a medium heat with 1T of butter, add the egg mixture, While that's happening preheat your oven too 400 degrees.
- Cook until the bottom is set. Place the 1/4c of Mozzarella on the top and bake until cheese is browned and is set all the way through
- After removing from oven, slide out onto a plate immediately and cool for 5 minutes before cutting into. Serve with a dollop of Sour Cream and enjoy! :)

- Heat the oil in a 10-inch ovenproof nonstick skillet over medium heat. Add the shallots and cook, stirring frequently, until softened, 3 to 4 minutes. Do not brown.
