FROSTED BANANA BARS

These banana bars are always a hit at potlucks in the small rural farming community where my husband and I live. I also like to provide them for coffee hour after church. They're so moist and delicious that wherever I take them, they don't last long. -Karen Dryak, Niobrara, Nebraska

BANANA OATMEAL COOKIE

This recipe has been handed down in my family for generations. It's a good way to use overripe bananas. It's also a moist cookie that travels well either in the mail or car. This is usually the first cookie to disappear at my house.

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
  • Combine flour, baking powder, and salt in a large bowl. Stir mashed banana, sour cream, and vanilla together in another bowl.
  • Cream margarine and sugar in a large bowl with an electric mixer. Beat in eggs. Mix in banana-sour cream mixture until incorporated. Add dry ingredients until well combined. Stir in nuts.
  • Drop small spoonfuls of batter onto the prepared cookie sheet; cookies do not expand much in the oven.
  • Bake in the preheated oven, checking occasionally, until bottoms are light golden brown and cookies are set but still a tad soft, 10 to 12 minutes. Remove cookies to a rack to cool.
  • While the cookies are cooling, prepare frosting: Melt butter in a saucepan over medium-low heat. Stir in brown sugar and reduce heat to low. Stir and bring to a boil. Boil, stirring constantly, for 2 minutes. Remove from heat.
  • Stir in 1/4 cup milk and bring to a boil again. Remove from heat and let cool, 10 to 15 minutes.
  • Gradually stir in powdered sugar until frosting is desired consistency. If frosting hardens while working, stir in a little bit of milk.
  • Spread frosting on cooled cookies.

  • Preheat your oven to 350°. Line 2 baking sheets (or use the same one) with parchment paper or grease your baking sheet. I use half sheet pans (they measure about 18x13 inches) for baking these cookies... sometimes called a jelly roll pan.
  • Place all ingredients in your mixer and mix well. You can add more or less powdered sugar depending on how thick you want it. Make sure your butter and cream cheese are completely softened or your frosting will be lumpy (still delicious but lumpy). This recipe will leave you with some leftover frosting. You can easily half the recipe but in my opinion it is just not quite enough (but I like a lot of frosting!)
