FROZEN CORN SALAD

This is a fresh, crisp, and colorful frozen corn salad. The cilantro and jalapenos give this salad a nice bite. A quick and super easy salad to have on a hot summer day. Also a great addition to a summer BBQ, though I eat this salad year round. Recipe inspired by Rita Reifenstein's Corn Salad recipe.

Frozen Corn Salad image

Steps:

Combine corn, cucumber, tomato, bell pepper, and red onion in a large salad bowl. Mix in cilantro and jalapeno.
Sprinkle lime juice over the salad. Add ranch dressing and stir. Cover and refrigerate until serving, at least 30 minutes.

Steps:

In a large bowl, combine the cream cheese and whipped topping. Stir in pie filling. Fold oranges into cream cheese mixture. , Transfer to a 9x5-in. loaf pan. Cover and freeze overnight. Remove from the freezer 15 minutes before cutting. Garnish with cherries and orange wedges if desired.

In a food processor, chop apricots. In a bowl, combine the apricots, strawberries, bananas, pineapple, orange juice and water. Ladle into muffin cups that have been sprayed with cooking spray. Freeze. , When frozen, quickly remove salads to tightly covered storage containers. When packing a lunch, place a salad in an individual storage container in a thermal lunch bag and it will thaw by lunchtime.

In a small bowl, combine pineapple and marshmallows. Set aside until marshmallows are softened, about 15 minutes. , Meanwhile, in a small bowl, beat cream cheese and mayonnaise until smooth. Stir into marshmallow mixture. Fold in cherries and walnuts., In a small bowl, beat whipping cream until soft peaks form. Fold into pineapple mixture. Spoon into a 6-cup mold; freeze overnight. Let stand at room temperature for 15-20 minutes; unmold onto a serving plate.
