Steps:
- Drain pineapple, and soften cream cheese.
- Blend all ingredients except Dream Whip. Fold in Dream Whip.
- Pour into muffin tins lined with paper bake cups and freeze.
- After they are frozen, leave the paper cups on and put them in a plastic bag in the freezer, to be kept until ready to use.
- Remove paper cups before serving.

- In a food processor, chop apricots. In a bowl, combine the apricots, strawberries, bananas, pineapple, orange juice and water. Ladle into muffin cups that have been sprayed with cooking spray. Freeze. , When frozen, quickly remove salads to tightly covered storage containers. When packing a lunch, place a salad in an individual storage container in a thermal lunch bag and it will thaw by lunchtime.

Steps:
- Beat cream cheese in a large mixing bowl using an electric mixer until fluffy. Add sour cream, sugar, and salt; mix well.
- Drain pineapple, reserving the juice. Dip banana pieces into the pineapple juice and place in a bowl. Add cherries, oranges, and the pineapple.
- Add marshmallows to the cream cheese mixture; fold in the fruit mixture. Grease a fluted tube pan with cooking spray and turn the fruit salad out into the pan.
- Cover and freeze salad for at least 8 hours. Unmold and let stand at room temperature at least 10 minutes before cutting.

- Once these are frozen I take them out of the pans and put them into a giant zip lock bag and store them in the freezer. Remember to take them out about 20 minutes before serving, so they aren’t hard as rocks! Also don’t stack these or they may melt together!

- First drain pineapple and oranges in a sieve or colander for at least 15 minutes, up to a few hours, to make sure excess juice has drained away.
- In a large bowl beat together cream cheese, powdered sugar, and coconut extract. Stir in coconut, marshmallows, chopped bananas, and drained fruit. Gently fold in Cool Whip until well combined.
- Spread fruit salad in a 9X13 casserole dish or portion out into 24 muffin tins lined with paper liners. If using a muffin tin, a trigger ice cream scoop helps portion out the salad cleanly and evenly. Top each cup or slice with a garnish, if using. Freeze until solid, 6 hours to overnight.
- Set out frozen fruit salad cups 5 minutes before serving or baking dish slices 10-15 minutes before serving.
