ORANGE DELIGHT JELLO SALAD
While there appears to be a huge variety of Orange Delight salads out there, I have yet to run across one made exactly the way we make it in our home. My mom received the recipe from a co-worker probably 40+ years ago. Even after a heavy meal, this is a really refreshing dessert. I hope you enjoy it as much as we do!

Steps:
- 1. For jello mixture: Bring water to a boil, add Jell-O, stirring until clear. Remove from heat. Add frozen orange juice concentrate and stir until melted. Stir in mandarin oranges and pineapple. Pour into an 11 x 7 dish and refrigerate overnight or until the jello mixture has completely set.
- 2. For Topping: Mix pudding with milk until it starts to set up. Be sure to use only 1 cup of milk, as listed in the ingredients. You don't want to make actual pudding. Fold in Cool Whip and spread over top of jello mixture.
- 3. Optional: Put mandarin orange slices on top for color. Add crushed pecans for added texture, color, etc.
FROZEN FRUIT DELIGHT

- Place contents of one frozen mixed fruit package in a microwave-safe dish. Microwave, uncovered, at 50% power for 1 minute. Repeat with remaining mixed fruit., In a blender, place half of the fruit, yogurt, banana and sugar; cover and process until smooth (mixture will be thick). Transfer to serving dishes. Repeat. Serve immediately or freeze for up to 4 hours.

- Put 7 cups water in large saucepan, and heat on high until boiling. Add sugar and stir until dissolved; set aside to cool. Place tea bags in 2 cups boiling water, and let steep until desired strength is acquired.
- In a large bowl, mix together sugar water, tea, lemonade concentrate and orange juice concentrate. Stir in gin. Place in freezer container and freeze overnight.
- To serve, Place several scoops into a tall glass, and fill with any clear carbonated beverage.

Everyone's favorite childhood ice cream treat becomes a sophisticated potluck dessert in this refreshing and creamy lush. - Heat oven to 375°F. Make and bake drop cookies as directed on pouch. Cool completely, about 30 minutes.
- In food processor, process half of the cookies to coarse crumbs. Remove to medium bowl. Continue to process remaining cookies to coarse crumbs; add to bowl. Stir in melted butter until well blended. In ungreased 13x9-inch (3-quart) glass baking dish, press cookie crumb mixture firmly in bottom. Set aside.
- In small bowl, place gelatin, and add boiling water; beat with whisk until blended. Stir occasionally about 2 minutes or until mostly dissolved. In medium bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Stir in dissolved gelatin. Let stand 5 minutes, stirring occasionally.
- In large bowl, beat cream cheese and powdered sugar with electric mixer on medium speed until smooth, scraping down side of bowl frequently. Beat in 2 cups of the whipped topping. Spread over cookie crust.
- Pour pudding mixture over cream cheese layer; spread evenly over top. Drop remaining whipped topping by spoonfuls over pudding layer; carefully spread until even. Refrigerate 5 hours.
- When ready to serve, sprinkle orange segments on top. Cut into 6 rows by 3 rows. Cover and refrigerate any remaining pieces.

FROZEN ORANGES
I've been making this recipe for close on 30 years. It's great, but only as great as the ice-cream you use. Don't be tempted to use any more liqueur as the alcohol stops the ice-cream setting (I've tried!) These are wonderful for a dinner party.

Steps:
- Remove a"lid" from the top of each orange (retain the lid).
- Carefully remove all the pulp from the orange-I use a dessertspoon to do this.
- Allow the ice-cream to soften for a minute or two, then working quickly, stir through the liqueur and concentrate and fill the orange shells with this mix.
- Replace the lids.
- Freeze for at least 6 hours but preferably overnight.
- Remove from the freezer about 10 minutes before serving so they go frosty.
- These look good with a sprig of orange or lemon leaves poked into the top before serving*note-don't be tempted to use the pulp in place of the concentrate, the flavour is all wrong.
- Use the pulp for juicing or something.

- In a saucepan, dissolve the sugar in the water by bringing it to a boil over medium-high heat. Turn off the heat and allow it to cool.
- Combine the sugar water with the pineapple juice, lemonade, orange juice and pureed strawberries in a 6-quart container. Mix in the rum to taste. Put the entire mixture into a large plastic ice cream pail and freeze overnight.
- To make the drinks to order, scoop 1/2 cup of the frozen mixture into an 8 oz glass. Fill the glass with lemon-lime soda and serve with a straw. Keeps well in freezer for up to one month.
