TASTY OATMEAL THE MICROWAVE WAY!
This is NOT boring oatmeal! I've hooked many a "I don't care for oatmeal" folks w/ this one! Other than the basics (water, oats, & salt), the ingredients are optional and may be varied to suit individual tastes.

Steps:
- Combine ingredients in microwave safe dish/pot. Nuke 2 mins 20 sec. Stir. If still "water-y," nuke 10-15 seconds.
- ***Note #1: I often use whatever fresh fruit I have on hand -- chopped apples, cut up bananas, fresh peaches, etc.
- ***Note #2: I also like to use dried fruit such as raisins, cherries, blueberries, etc. When using dried fruit, I like to nuke the fruit in enough water to cover for appx 2 mins, depending on the size of the fruit and it's estimated moisture content.
- ***Note #3: After nuking dried fruit, do not drain if there is any water left. Add the other ingredients to the pot and go from there.
- ***Note #4: Other than the water and oats, I don't actually measure the other stuff, just adding a handful of this and some of that.

MICROWAVE FRUIT CRISP

- Place fruit in a small microwave-safe bowl. In another bowl, combine the dry ingredients; cut in butter until crumbly. Sprinkle over fruit. Microwave, uncovered, on high for 1-1/2 minutes or until fruit is tender.

A healthy, satisfying breakfast dish, which is ready in minutes and will keep hunger pangs at bay for hours. Depending on the fruit you use, the porridge will end up a strange purply-pink colour, but don't let that put you off - it will taste great!

- Put the oats and milk into a large, wide bowl or jug (I use a 1-litre measuring jug).
- Microwave on medium power (which for my microwave is 600W) for 4 minutes, stirring half-way through.
- Stir in the frozen berries, then microwave on full power (for me, 1000W) for 1 minute.
- Stir well, and eat at once!

PORRIDGE WITH DRIED FRUITS AND NUTS
With a touch of sweetness and plenty of piquant fruits, this comforting breakfast porridge is just right.

- Fill a large pot with water; cover and bring to a boil. Add wheat berries and return to a boil. Cook until grains are al dente, about 1 hour. Drain.
- Meanwhile, bring 4 cups water to a boil in a medium saucepan. Add salt and oats and cook, stirring, until beginning to thicken, about 3 minutes. Reduce heat to medium low and simmer until almost all liquid is absorbed, about 30 minutes. Add 1/2 cup milk along with molasses, honey, cinnamon, and drained wheat berries. Cook, stirring constantly, until heated through and thick, about 5 minutes.
- Divide porridge among shallow bowls and pour warm milk over top. Sprinkle with dried fruits and toasted nuts, dividing evenly, and serve immediately.
MICROWAVE APPLE CRISP
I don't usually like 'baking' with the microwave, but this recipe works great. The topping comes out crispy on top, moist inside, and delicious all around. It's a wonderful dessert that's quick and easy to make. Best served warm with vanilla ice cream or whipped topping.

- Spread the apples evenly in an 8 inch square glass baking dish. A deep dish glass pie plate will also work. In a medium bowl, mix together the melted butter, brown sugar, oats, flour, cinnamon and allspice. Sprinkle this topping evenly over the apples.
- Cook on full power in the microwave for 10 to 12 minutes, until apples can easily be pierced with a knife. Enjoy!
