- Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine flour, cocoa and salt; gradually beat into creamed mixture. , Spread into a greased 13x9-in. baking pan. Bake until the top is dry and the center is set, 25-30 minutes. Cool completely in pan on a wire rack. If desired, dust with confectioners' sugar.

- Preheat the oven to 350 degrees F (180 degrees C) and line an 8-by-8-inch baking pan with parchment.
- Make the flax "eggs": Stir 2 tablespoons ground flax with 5 tablespoons water in a small bowl. Let sit for 15 minutes. (See Cook's Note.)
- Meanwhile, combine the almond flour, sugar, cocoa powder, baking soda and salt in a large bowl; set the dry mixture aside.
- In a medium, microwaveable bowl, melt 3 ounces (about 1/2 cup) of the chopped chocolate. Add the almond butter and stir to combine. Let cool slightly and stir in the coconut oil, then the maple syrup, vanilla and flax "eggs" and whisk until evenly combined.
- Whisk the dry mixture into the wet until just combined (be careful not to over mix). Then fold in the remaining 2 ounces (about 1/3 cup) chopped chocolate.
- Transfer the batter to the prepared baking pan and bake until just set in the center, 20 to 25 minutes.
- Let cool completely to room temperature, then cut into squares. Serve or cover and refrigerate for up to 4 days or freeze and thaw for another time.

- Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
- Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.
- In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.
- Whisk in the melted chocolate (make sure it's not too hot or else the eggs will cook), then sift in the flour, cocoa powder, and salt. Fold to incorporate the dry ingredients, being careful not to overmix as this will cause the brownies to be more cake-like in texture.

FUDGY BROWNIES
Melt semisweet and unsweetened chocolate to make these brownies rich with cocoa flavor.

- Preheat the oven to 350 degrees F. Line a 9-by-13-inch baking dish with aluminum foil, leaving about a 2-inch overhang of foil on at least 2 sides, and lightly coat with cooking spray.
- Whisk the flour, baking powder and salt together in a medium bowl and set aside. Bring 1-inch of water to a simmer in medium saucepan over medium heat. Put both the semisweet and unsweetened chocolates and butter in a medium heatproof bowl that sits comfortably over the saucepan without touching the water. Stir occasionally until the chocolate melts and the mixture is smooth. Remove from the heat.
- Whisk the sugar, vanilla and eggs together in a large bowl. Add the chocolate mixture and stir until blended and then stir in the flour mixture until just combined. Spread in the prepared baking dish.
- Bake until a toothpick inserted into the center comes out with a few moist crumbs, 25 to 30 minutes. Cool the brownies completely in the pan on a wire rack. Lift the brownies out of the pan using the foil and cut into squares.
FUDGY PRETZEL BROWNIES
Steps:
- HEAT oven to 350 degrees F. Coat a 13 x 9-inch baking pan with no-stick cooking spray. Combine brownie mix, oil, water and eggs in large bowl; stir 50 strokes with spoon. Stir in 1 cup chopped pretzels. Spread evenly in prepared pan. Bake 28 to 31 minutes or until toothpick inserted in center comes out clean. Cool completely on wire rack.
- STIR peanuts, caramel topping and remaining 1 1/2 cups pretzels in small bowl just until coated. Spread evenly over cooled brownies.
- PLACE frosting into corner of 1-quart heavy-duty resealable plastic bag. Microwave on HIGH 5 seconds. Cut small corner off bag. Starting in one corner of pan, drizzle evenly in a left to right sweeping motion, ending at opposite corner of pan. Chill 5 minutes or until frosting is set. Serve immediately.
- Best when served the same day.
FUDGY BROWNIES GIFT BAG
This is a recipe that I clipped from a magazine (Canadian Living?) back in 2003. I have given this mix out many times and have been asked for this recipe. It is very good. I use the cellophane gift bags from the Dollar Store in a 2 quart size. It is much cheaper than buying jars, as you get anywhere from 12- 20 bags for $1. Attach the directions with a pretty card and some curly ribbon.

- Write the following directions on a gift tag:
