GAME-DAY THAI CHICKEN MEATBALLS

These Thai chicken meatballs make a great game-day snack. We also like to serve them as a main dish over stir-fried veggies. -Merry Graham, Newhall, California

Steps:

  • Preheat air fryer to 350°. In a small bowl, combine chili sauce, lime juice, ketchup and soy sauce; reserve 1/2 cup for serving. In a large bowl, combine egg, bread crumbs, green onion, cilantro, salt, garlic powder and remaining 4 tablespoons chili sauce mixture. Add chicken; mix lightly but thoroughly. Shape into 12 balls., In batches, arrange meatballs in a single layer on greased tray in air-fryer basket. Cook until lightly browned, 4-5 minutes. Turn and cook until lightly browned and cooked through, 4-5 minutes longer. Serve with reserved sauce; sprinkle with additional cilantro.

Steps:

  • Preheat the oven to 450 degrees F.
  • Combine the pork, shrimp, lemongrass, sesame seeds, lime juice, chiles, ginger, garlic, basil, cilantro, mint, soy sauce, fish sauce, breadcrumbs and eggs in a large mixing bowl and mix by hand until thoroughly incorporated. Drizzle the olive oil into a 9 by 12-inch baking dish, making sure to evenly coat the entire surface.
  • Roll the mixture into round, golf ball size meatballs, making sure to pack the meat firmly.
  • Place the balls into the oiled baking dish such that all the meatballs are lined up evenly in rows and are touching each of their 4 neighbors in a grid.
  • Roast until firm and cooked through, about 20 minutes. Allow the meatballs to cool about 5 minutes before removing from the baking dish.
  • Garnish with shaved carrots and chopped roasted peanuts. Serve with Peanut Dipping Sauce.

Peanut Dipping Sauce, recipe follows
1 cup chunky peanut butter
1/2 teaspoon grated ginger
2 teaspoons sesame oil
2 teaspoons soy sauce
1/4 cup hot water
2 tablespoons rice wine vinegar
2 tablespoons chopped fresh cilantro

These are tasty little meatballs that are so easy to prepare. You can serve them with a variety of dipping sauces. Great for cocktails and dinner parties or just having snacks.

Steps:

  • Mix all ingredients together, except oil (and cucumber and chile sauces).
  • Wet hands, and take one tbsp of mixture and form into meatball; repeat.
  • Shallow-fry the meatball until they are brown and cooked through.
  • Serve with Thai cucumber sauce (may use recipe#29196) and Thai red chile sauce (may use recipe#30195), or other dipping sauces of choice, if desired.

  • Make the meatballs: In a large bowl combine the chicken, panko, 2 cloves of garlic, 1 tablespoon of ginger, scallions, jalapeno, lemongrass, cilantro, fish sauce and curry paste. Season with ½ teaspoon salt and ¼ teaspoon pepper. Use your hands or a rubber spatula to gently mix until just combined. Do NOT overmix.
  • Using wet hands to prevent sticking, roll the chicken mixture into golf ball-sized balls (about 2 tablespoons mixture each). If the mixture is too wet, add 1 tablespoon of panko, at a time, to the mix until it is easier to shape. Transfer meatballs to prepared baking sheet.
