PASTA, PESTO, AND PEAS
Blend fresh basil pesto at home for Ina Garten's Pasta, Pesto and Peas recipe from Barefoot Contessa on Food Network, and have a vibrant springtime meal.

- Cook the fusilli and bow ties separately in a large pot of boiling salted water for 10 to 12 minutes until each pasta is al dente. Drain and toss into a bowl with the olive oil. Cool to room temperature.
- In the bowl of a food processor fitted with a steel blade, puree the pesto, spinach, and lemon juice. Add the mayonnaise and puree. Add the pesto mixture to the cooled pasta and then add the Parmesan, peas, pignoli, salt, and pepper. Mix well, season to taste, and serve at room temperature.
- Place the walnuts, pignoli, and garlic in the bowl of a food processor fitted with a steel blade. Process for 15 seconds. Add the basil leaves, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is thoroughly pureed. Add the Parmesan and puree for a minute. Use right away or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.
- Notes: Air is the enemy of pesto. For freezing, pack it in containers with a film of oil or plastic wrap directly on top with the air pressed out.
- To clean basil, remove the leaves, swirl them in a bowl of water, and then spin them very dry in a salad spinner. Store them in a closed plastic bag with a slightly damp paper towel. As long as the leaves are dry they will stay green for several days.
GARDEN PESTO PASTA SALAD

- Cook the pasta according to the package instructions.
- Drain and transfer the pasta to a large serving bowl.
- Add the grape tomatoes, yellow tomatoes, red onion, and mozzarella balls to the pasta.
- Pour the pesto sauce over the pasta.
- Toss the ingredients together.
- Serve warm in a bowl.

- Cook pasta according to package directions. Drain but do not rinse. Return pasta to the pan; add vegetables and toss. Cover for 3-5 minutes. Vegetables will lightly steam in pasta. , Place pasta in a large salad bowl. Top with three-fourths of the dressing and lightly toss. Chill several hours or overnight. , If pasta is dry, add remaining dressing along with meat, cheese, olives, and parsley or basil if desired. Chill until serving.

- Cook pasta according to package instructions. Whenever I make pasta salads I like to undercook the pasta by 1-2 minutes. Drain and set aside
- In a food processor add in basil, kale and pine nuts. Give it a pulse until greens have broken down to a thick paste. Then add in parmesan cheese, oil, garlic and season with salt and pepper. Remember the parmesan cheese is already salty, depending on your taste you may not need to add much salt at all. Pulse until incorporated. Pesto will still be grainy. If needed add 1-2 tbsp of water to thin it down.
- Add pasta, veggies and 1 cup of pesto to a large bowl and mix to combine. You can add more pesto if you like. This recipe yield about 2 cups of pesto so you should have some leftover to use later on. You can freeze the leftover pesto or use within 1 week.
