Garlic Herb Grilled Pork Tenderloin image

Steps:

  • Cut a horizontal slit in the pork tenderloin, leaving the halves attached. Rub tenderloin with olive oil.
  • Insert garlic into the slit and on onto the fatty part of pork. Press thyme and rosemary into slit. Sprinkle tenderloin with salt and pepper.
  • Preheat an outdoor grill for medium-high heat.
  • Lightly oil the grill grate. Place pork on grill. Cook approximately 1 hour, turning every 15 minutes, to a minimum internal temperature of 145 degrees F (63 degrees C).

Simple and delicious. Marinate pork in a combination of sherry, balsamic vinegar, oregano and basil, plus plenty of garlic and a dash of lemon juice, then grill to perfection (toss some dried oregano or basil stems in the coals for even more flavor!). Prep time includes marinating.

Garlic & Oregano Grilled Pork Tenderloin image

Steps:

  • Combine marinade ingredients in a plastic zipper bag.
  • Add whole pork tenderloin and marinate, refrigerated, for at least 6 hours, but overnight produces best flavor.
  • When ready to grill, let pork sit at room temperature for about 15 minutes, then remove tenderloin from bag and discard leftover marinade.
  • If you wish, for even grilling,"tuck under" the tapered ends of the tenderloin so meat is of equal thickness throughout while cooking.
  • For even more herb flavor, add some oregano and basil stems to the hot coals.
  • Oak chips soaked about 30 minutes are good, too.
  • Grill tenderloin about 5 minutes per side (all four sides, 20 minutes total) or until meat is still juicy and just faintly pink inside (remember meat will still cook a bit after it's removed from the grate).

Pork Tenderloin Marinated in Garlic, Lemon and Oregano with Greek Salad image

Steps:

  • Combine the garlic, zest, juice, oregano and oil in blender and blend until smooth. Put the pork in a baking dish, add the marinade and turn to coat. Cover and refrigerate for at least 1 hour and up to 4 hours.
  • Heat a grill to high. Remove the pork from marinade and season with salt and pepper, to taste. Grill until golden brown on all sides and cooked to medium doneness. Brush the radicchio and tomatoes with oil and grill until lightly charred. Remove the pork from the grill to a cutting board and loosely tent with foil. Let rest 10 minutes before slicing. Remove the radicchio and tomatoes from grill and set aside to cool slightly.
  • Whisk together vinegar, mustard, anchovy paste and a touch of honey in a medium bowl. Slowly whisk in the olive oil until emulsified. Add the radicchio, tomatoes, arugula, cucumber, olives, and capers and toss to combine. Transfer to a platter and top with feta and pork slices. Garnish with fresh oregano and serve.

  • Put all ingredients except pork in a blender or food processeor with salt and pepper to taste.
  • Blend.
  • Put the pork in a sealable plastic bag and pour the marinade over it.

GARLIC AND ROSEMARY PORK TENDERLOIN image

Steps:

  • 1. Peel, crush and finely mince garlic on cutting board.-
  • 2. Sprinkle the garlic with the sail and then use the back of the knife and a lot of pressure to start to rub the garlic into a paste. The salt will allow you to break the garlic down into a paste as you rub it with the back of the knife. Repeat the process until you get a nice paste consistency.
  • 3. Remove and then mince the leaves of 4 of the rosemary sprigs, saving the stems and remaining sprigs until later in the recipe.
  • 4. Combine the garlic, rosemary, olive oil, and a few turns of black pepper in a small bowl and mix thoroughly to form a paste.
  • 5. Pat the pork tenderloin dry with a paper towel and then rub with the garlic and rosemary paste.
  • 6. Allow the pork to sit at room temperature for about 20 minutes to marinate.
  • 7. Light the grill and prepare for medium grilling.
  • 8. Once the grill is ready and the pork tenderloin has marinated for 20 minutes, throw the 2 remaining rosemary sprigs and reserved sprigs down into the fire and then immediately place the pork tenderloin over the now smoldering rosemary and close the lid of the grill.
  • 9. Grill for about 6 minutes and then open the lid of the grill and turn the pork tenderloin 1/4 turn. Treat the pork like it has 4 sides, we are going to grill all 4 sides to get it nice and even.
  • 10. Continue to grill the pork 6 minutes per side until it reaches an internal temperature of around 145 degrees.
  • 11. Remove the pork tenderloin from the grill, cover with aluminum foil and let rest for 8 minutes before slicing

  • Place lime juice, olive oil, garlic, salt, and oregano in a large resealable plastic bag. Shake sealed bag until ingredients are well mixed. Taste the marinade for tartness.
