PARMESAN GARLIC ROLLS
Homemade rolls with Parmesan cheese and a touch of garlic make any dinner extra special.

Steps:
- Combine 1-1/2 cups flour, undissolved yeast, sugar, salt and garlic powder in a large mixer bowl. Heat water, milk and butter until very warm (120 degrees F to 130 degrees F). Add to dry ingredients and beat for 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in enough additional flour to make a soft dough.
- Cover and let dough rest 10 minutes in bowl.
- Portion dough evenly into 12 to 15 greased muffin cups (2-1/2 x 1-1/4 inches).
- Tip: Use an ice cream scoop to make portioning easier. Cover; let rise in warm, draft free place until doubled in bulk, about 35 minutes.
- Combine egg white with 1 tablespoon water. Carefully brush tops of rolls with egg mixture; sprinkle with cheese. Bake at 375 degrees F for 15 to 18 minutes, or until lightly browned on top. Remove from pans and cool on wire rack.

- Cut bread dough into 16 pieces; shape into balls. Place on a floured surface; cover and let rise in a warm place for 10 minutes. In a bowl, stir Parmesan cheese and garlic powder into butter. Using a spoon, roll balls in butter mixture; arrange loosely in a 9-in. round baking pan. , Cover and let rise in a warm place until doubled. Bake at 375° for 10-15 minutes or until golden brown. Warm leftover butter mixture; when rolls are baked, pull them apart and dip them again. Serve warm.

Steps:
- Preheat oven to 375 degrees F.
- Grease a 12-inch cast iron skillet with vegetable oil.
- In a small bowl, combine melted butter, garlic salt, oregano, parsley and Parmesan cheese until well combined.
- Cut each biscuit in half then roll into a ball.
- Dip and coat each ball of dough in the butter and seasoning mixture and place in prepared skillet.
- Bake for 18-20 minutes, or until golden brown.

- In a small bowl, mix warm water with yeast and 1/2 tsp sugar. Allow to proof until foamy; about 5 minutes. Add the powdered milk, 3 cups of flour, remaining 1/2 cup sugar, cream cheese, salt, and the yeast mixture to the bowl of a stand mixer. Mix until the dough begins to pull away from the side of the bowl, adding flour as needed to create a slightly sticky dough.
- Turn the dough out onto a floured surface and knead a few times. Place the dough in a lightly greased bowl, cover with plastic wrap, and allow to rise for about an hour, or until it's doubled in size.
- Punch the dough down and turn it back onto the floured surface, and knead a few times. Cut the dough in half and roll each half until its 1/2" thick. Cut into rounds with a biscuit cutter. Place each piece around a lightly greased skillet. Cover and let it rise again until doubled in size.

- To a 2 cup (or larger) glass measuring cup or mixing bowl, combine the warmed water (to 110-115 degrees F, read the label on the package of yeast to confirm temperature) with the yeast and then the sugar. Whisk thoroughly.
- Combine remaining dough ingredients into a mixer with a dough hook. Pour the yeast mixture into the mixing bowl. Run the dough hook (or mix/knead by hand) for 5-7 minutes, or knead until a large ball of dough has formed. Remove any dough from the hook, cover the mixing bowl with plastic wrap or a towel to rise for 10-15 minutes.
- While you're waiting on the dough to rise, preheat oven to 375 degrees F. Spray a 10-inch cast iron skillet with nonstick cooking spray. If you don't have a skillet, you can use a circular 9" baking pan or dish.
- Divide the dough into 16 even balls. I found it easiest and best to flour my counter lightly and roll the dough out to 12" by 12" and cut into 16 even slices. Three slices along the dough horizontally and three slices vertically. Roll each slice into a ball with the palms of your hands and place into the skillet.

- Lightly butter the bottom of a cast iron skillet. Place dinner rolls in skillet. Let rolls thaw until doubled in size - according to package directions.
- Melt butter in microwave safe dish. Once melted, add garlic, herbs and salt. Stir to combine. Brush butter mixture over rolls.
- Bake for 10 minutes. Take rolls out of oven and sprinkle on cheese. Return to oven and bake until done, approximately 5 more minutes.
