OLD FASHION GINGERBREAD
My dad would always tell me his mother made gingerbread with hot water and that it was dense and rich with molasses. Over the years I looked for such a recipe, to no avail. Then one day I was given a book compiled by an elderly woman who recalled recipes from her childhood in Virginia, and there it was! I made one slight change, substituting shortening for lard. For gingerbread lovers, this classic version is wonderful, whether you eat it hot and dripping with butter or at room temperature.

- Preheat oven to 350°. Grease a 9-in. square baking pan; set aside. In a large bowl, mix butter, shortening and boiling water until smooth; cool slightly. Beat in eggs and molasses until well blended. In another bowl, whisk flour, ginger, baking powder, cinnamon, salt and baking soda; gradually beat into molasses mixture. Transfer to prepared pan., Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool completely on wire rack. If desired, sprinkle with confectioners' sugar before serving.

OLD-FASHIONED GINGERBREAD
Steps:
- Preheat the oven to 350 degrees F. Grease an 8 by 8-inch cake pan and line with parchment paper. Grease and flour the pan.
- Place the rum and raisins in a small pan, cover and heat until the rum boils. Turn off the heat and set aside. Place the butter and molasses in another small pan and bring to a boil over medium heat. Pour the mixture into the bowl of an electric mixer fitted with the paddle attachment. Cool for 5 minutes, then mix in the sour cream and orange zest.
- Meanwhile, sift the flour, baking soda, ginger, cinnamon, cloves, and salt together in a small bowl. Mix with your hands until combined. With the mixer on low speed, slowly add the flour mixture to the molasses mixture and mix only until smooth. Drain the raisins and add them and crystallized ginger to the mixture with a spatula. Pour into the prepared pan and bake for about 35 minutes, until a toothpick comes out clean. Set aside to cool completely.
- When the cake has cooled, whisk together the confectioners' sugar and orange juice and pour it onto the gingerbread, allowing it to drip down the sides. Allow the glaze to set. Cut the gingerbread into 9 squares.

- Heat oven to 325°F. Grease and flour bottom and sides of square pan, 9x9x2 inches.
- Beat all ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 3 minutes, scraping bowl occasionally. Pour into pan.
- Bake 50 to 55 minutes or until toothpick inserted in center comes out clean. Serve warm or cool.

This is an old recipe from the Scovil Bakery in Nauvoo,Il.These were baked in a 'bustle oven'and they still bake bread and cookies in that oven to serve to tours groups to show them what it was like during pioneer times.

- Combine first four ingredients in large bowl.
- Add eggs.
- Mix dry ingredients together and add to wet.
- Mix well.
- Cover and refrigerate overnight.
- Roll dough out on Pam (or other non-stick cooking spray) covered surface (I roll mine out thick,I like a thicker cookie) Cut with desired shapes.
- Bake at 350 degrees for 10 minutes.
- These cookies freeze well and are softer and more flavorful after freezing.

GINGERBREAD (OLD RECIPE)
This is one of those old-fashioned recipes with simple ingredients. It's delicious and tastes of Christmas. The gingerbread is soft, tender, and full of spices. The bread is not overly sweet and heavenly. We made it extra special by serving with sweetened whipped cream. A perfect recipe for the holiday season.

- 1. Preheat oven to 350°F. Sift together: flour, ginger, cinnamon and baking soda in a medium bowl. Combine and set aside.
- 2. Beat butter, sugar, and molasses in a large bowl with electric mixer on medium speed until well blended and smooth.
- 3. Add 2 whole eggs; beat well.
- 4. Gradually add flour mixture alternating with boiling water.
- 5. Beat on low speed after each addition.
- 6. Spoon batter into greased 9x13-inch square baking pan.

- Preheat oven to 350°F. Whisk together brown sugar, molasses, boiling water, and cubed butter in a medium bowl until butter melts. Whisk in baking soda and salt. Let stand until lukewarm, about 25 minutes. Whisk in egg.
- Whisk together flour, ginger, cinnamon, nutmeg, allspice, cloves, and black pepper in a small bowl; add to brown sugar mixture, and whisk until smooth. Pour into a generously greased (with butter or cooking spray) and floured 9-inch square pan.
