These creamy garlic mashed potatoes are so good, you can serve them plain-no butter or gravy is needed. This is one of our favorite red potato recipes. -Valerie Mitchell, Olathe, Kansas

Garlic Mashed Red Potatoes image

Steps:

  • Place potatoes and garlic in a large saucepan; cover with water. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until potatoes are very tender., Drain well. Add the butter, milk and salt; mash. Stir in cheese.

Steps:

  • Bring chicken broth to a boil. Add potatoes and cook until tender but still firm, about 15 minutes; drain, reserving broth.
  • Stir in garlic, cream and 1 to 2 tablespoons broth; mash until creamy. Blend in sour cream, chives, salt and butter. Heat through and serve.

Garlic Roasted Potatoes image

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.
  • Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potatoes in an 8x8 inch baking dish.
  • In a small bowl combine melted butter, garlic, salt and lemon juice; pour over potatoes and stir to coat. Sprinkle Parmesan cheese over potatoes.
  • Bake, covered, in preheated oven for 30 minutes. Uncover and bake until golden brown and tender when pierced with a fork, about 10 minutes more.

Herb Garlic Red Potatoes image

Steps:

  • 1. cut the potatoes in half and place in a saucepan; cover with water and bring to boil. Cook until tender, approximately 15 minutes and drain well
  • 2. In a large skillet, fry bacon until brown on both sides, remove from skillet and drain on paper towels. Drain all but about 2 tablespoons of the bacon grease out of the skillet, Crumble bacon and add to skillet along with all remaining ingredients. Add potatoes to skillet and cook until heated through and potatoes are coated with butter and herb mixture. Serve warm.

1/3 c butter
1/4 c dried or fresh parsley
2 Tbsp chives, minced (dried or fresh)
1 tsp dried tarragon
3 clove garlic, minced
5 slice bacon, fried and crumbled

Garlicky Red Potatoes image

Steps:

  • Wash the potatoes thouroughly, and quarter them (or the size you prefer), leaving the skin on.
  • Steam them until tender to the fork.
  • While potatoes are steaming, heat up a small sauce pan, and add the butter and the olive oil, stirring until well blended and warm. Pass the garlic cloves thru a garlic press and add to the oil and butter mixture in the sauce pan. Stir until bubbly, and you can't resist the aroma.
  • When potatoes are cooked to desired tenderness, transfer them to a bowl, sprinkle with the chopped parsley, and add the garlick mixture. Mix using a spoon and envolving movements, until all the potatoes are covered with the yummy mixture.
  • Serve and enjoy -- REALLY GOOD!
