- In a microwave-safe dish, combine the snow peas, water and garlic. Cover and microwave on high for 3-4 minutes or until crisp-tender; drain. Combine the butter, lemon juice and Italian seasoning. Drizzle over peas; toss to coat.

- Quick fry just till bright green and still crisp.

- Soak snow vegetables in a large bowl or other container for 1 to 2 hours. Then wash thoroughly (2 to 3 times) to get rid of all the dirt and sand clinging to the leaves and stems. Drain off all the water.
- Using very high heat, heat oil in your wok until it just starts to smoke a bit. Quickly add the garlic and the veggies, taking care not to burn them by constantly stirring. After a minute, add salt, cracked white pepper, and sesame oil. Stir and mix well.
- Put the lid on the wok and cook for about 1-2 minutes. Remove lid, stir briefly, and transfer to a dish.
- Tip: don't open the lid more than once during cooking, as it will cause the vegetables to lose their green color!

- To prepare the snow peas rinse them well then trim the tips and remove the fibrous strings that run alongside the edges of the two sides of each pod. Use a small sharp knife to gently cut into the flesh just under each tip, then pull down to remove the string. If needed diagonally cut larger pods across the middle to make them smaller and easier to cook.
- Heat a skillet over medium-high heat until very hot, about 2-3 minutes. Add the olive oil and the trimmed pods. Move them around to coat in oil and let them sear for a few minutes, stirring occasionally to avoid excessive browning.
- Add the water and stir to move the snow pea pods around. Let the water evaporate and steam the pods, cooking them through. About 2-3 minutes.
