GELATIN PRETZEL SALAD

- 1. Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Place pretzels in resealable food-storage plastic bag; smash with rolling pin or flat side of meat mallet until crushed. In medium bowl, mix crushed pretzels, brown sugar and pumpkin pie spice. Stir in butter. Press mixture onto bottom of baking dish. Bake 9 to 11 minutes or until set. Cool on cooling rack. Meanwhile, in large heatproof bowl, pour boiling water on gelatin; stir until gelatin is dissolved. Add enough cold water to reserved juice to equal 2 cups; stir into gelatin. Refrigerate until partially set, about 1 hour 45 minutes. In medium bowl, beat cream cheese and granulated sugar with electric mixer on medium speed until light and fluffy. Fold in whipped topping. Spread mixture evenly over pretzel crust. Finely chop mandarin orange segments; gently stir into partially set gelatin. Carefully pour over cream cheese layer. Refrigerate 8 hours or overnight. Cut into squares.

PRETZEL SALAD
This is an easy and decorative three layer salad consisting of a pretzel crust, a cream cheese center and a strawberry Jell-O topping. It's just plain delicious.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- In a medium bowl, mix crushed pretzels, margarine and sugar.
- Press crushed pretzel mixture into the bottom of a 9x13 inch baking dish, and bake in the preheated oven 8 minutes. Remove from heat and allow to cool.
- Blend together the cream cheese and sugar. Fold in whipped topping and spread evenly over cooled pretzel mixture.
- In a medium bowl, dissolve the strawberry flavored gelatin in boiling water. Mix in strawberries and set aside to cool for 15 minutes.
- Pour gelatin mixture over cream cheese mixture and refrigerate until set, about 4 hours.

I got this recipe from a friend Lynn when we hosted a BBQ for our families (we shared an apartment a few years after college). My family loved this recipe. It's perfect for summer and eating outside, but wait to bring it out into the heat until you are ready to eat.

Steps:
- Preheat oven to 350 degrees.
- Place pretzels in ziplock bag and crush into small pieces using rolling pin. Measure pretzels after crushing.
- Mix together pretzels, 3 tbsp sugar, and butter.
- Pat pretzel mixture into a 9 x 11 pan and bake for 10 minutes.
- When the crust is cool, mix cream cheese, 3/4 cup sugar and Cool Whip together and spread on crust.
- Bring 2 cups water to a boil and stir in strawberry Jello. Add cold water and mix well.
- Add strawberries.
- Let mixture set until slightly thickened, then pour over cream cheese mixture.
- Refrigerate until jello is firm.
ORANGE GELATIN PRETZEL SALAD
This is like the strawberry pretzel salad, but uses orange instead for a refreshing change. We really like it!!

- In a small bowl, combine pretzels and 3 teaspoons of sugar;stir in butter. Press into an ungreased 13x9 inch baking dish. Bake at 350°F for 10 minutes. Cool on a wire rack.
- In a large bowl, dissolve gelatin in boiling water. Add pineapple and oranges. Chill until partially set, about 30 minutes.
- In a small mixing bowl, beat cream cheese and remaining sugar until smooth. Fold in whipped topping. Spread over crust. Gently spoon gelatin mixture over cream cheese layer. Cover and refrigerate for 2-4 hours or until firm.
- Cut into squares. Garnish with additional whipped topping if desired.

- Mix crushed pretzels, butter, and brown sugar together in a bowl; press into a 9x13-inch baking dish.

I recently saw this recipe on "The View". All the ladies thought it was 'really good', except for Barbara Walters who thought it was just 'good'. I haven't prepared it yet but would like to know your opinion. I like Cool Whip for it's convenience but, for those who prefer real whipped cream try my recipe for Recipe#114075. I've guesstimated the servings and prep time which includes allowing the jello to set. NOTE: Fresh pineapple should NOT be used in this recipe or any other recipe containing Jello because the jello will not set. This is 'not true' with canned pineapple.
