PENNSYLVANIA DUTCH POTATO DOUGHNUTS

Steps:

  • In a large bowl, combine the potatoes, milk, eggs and butter. Combine the sugar, baking powder and 2 cups flour; stir into potato mixture. Add enough remaining flour to form a soft dough. Refrigerate, covered, 1 hour., Divide dough in half. Turn each half onto a lightly floured surface; roll to 1/2-in. thickness. Cut with a 2-3/4-in. doughnut cutter. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels. , In a small bowl, mix glaze ingredients until smooth. Color glaze if desired. Dip doughnuts in glaze and sprinkles as desired.

2-1/2 cups mashed potatoes or riced potatoes (without added milk, butter or seasonings)
1 cup whole milk
3 large eggs, room temperature, lightly beaten
2 tablespoons butter, melted
2 cups sugar
2 tablespoons baking powder
5 to 6 cups all-purpose flour
Oil for deep-fat frying
GLAZE:
2 cups confectioners' sugar
5 tablespoons half-and-half cream
1/2 teaspoon vanilla extract
Optional: Food coloring and sprinkles

GERMAN FASTNACHTS WITH POTATO

The Lutherans call these Fastnachts and are supposed to eat them on Shrove Tuesday; the Mennonites call them Raised Doughnuts and will eat them any time. They're wonderful, warm or cold, with maple syrup, or sprinkled with sugar.

German FASTNACHTS with potato image

Steps:

  • Dissolve the yeast in the 1/2 cup warm water with 1 tsp of sugar.
  • Mix potatoes, sugar, potato water and flour; add yeast dissolved in water.
  • Let rise in a warm place for several hours.
  • Then add 1 cup sugar, 1 cup lukewarm water or milk, 3/4 cup melted butter, 3 eggs, salt and about 5 cups flour for stiff dough.
  • Turn onto a well floured board and knead for about 3 to 5 minutes.
  • Add a small amount of extra flour if necessary so the dough can be handled without sticking to your fingers.
  • Grease a large bowl.
  • Place the dough in the greased bowl.
  • Cover with a thin towel, and let rise in a warm, draft free place for about 2 hours or until it is at least double in size.
  • Now, according to all my instruction, you’re supposed to let the dough rise again for another hour or two, but that means you’d be fussing with these things all day; figure it out; this would be its third rising, with another to come; I think at this point I’d be reckless and divide the dough in thirds and start rolling it out.
  • What matters if you do have a few large holes in your fastnachts?
  • Take your choice, rise or roll.
  • I’d try rolling the dough to about 3/4 inch thickness.
  • Fastnachts have a traditional diamond shape; cut them into diamonds with a knife.
  • Another essential is to cut a slit across the top of each fastnacht with a sharp knife.
  • Let the fastnachts rise, covered, in a warm place, till they’re springy to the touch; when they’re quite fat and puffy, drop them with the raised side down into fat that is hot enough to brown a bread cube—375 degrees.
  • Fry on both sides.
  • If you don’t want that many fried cakes you might try baking some in a hot oven as rolls.

1 packet yeast, dissolved in

1 cup hot mashed potatoes
1 cup sugar
1 cup water, that the potatoes were boiled in (lukewarm)
1 cup all-purpose flour

5 cups sifted flour, for stiff dough (about)

  • In a large bowl, dissolve yeast in warm buttermilk. Add potatoes, eggs and butter. Add 2 cups sugar, baking powder, baking soda, salt, nutmeg and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. Do not knead. Cover and refrigerate for 2 hours. , Turn onto a floured surface; divide into fourths. Roll each portion to 1/2-in. thickness. Cut with a floured 3-in. doughnut cutter. , In an electric skillet or deep-fat fryer, heat oil to 375°. Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels. Combine remaining sugar and cinnamon; roll doughnuts in cinnamon-sugar while warm.

  • Heat milk and butter in a pot at medium heat. Stir continuously until butter has melted. Remove from the pot from the heat and let the mil-butter mixture cool. Next combine fresh yeast and 1 tablespoon of sugar in a bowl. Using a spoon break the yeast into small pieces, then mix well until you have a watery mixture. Leave the mixture for 10 minutes. If you're using dry yeast, see how to activate dry yeast here.Put the flour, the remaining sugar, vanilla sugar and a pinch of salt in a bowl. Make a hole in the middle, then pour in the yeast - sugar mixture in the middle. Mix well. Add the eggs, then start mixing and slowly adding the lukewarm milk - butter mixture. Finally add slowly the fruit brandy shot while the dough is busy kneading.
  • Add a tablespoon of sunflower oil and knead. Knead the dough very well, until you see bubbles in the dough or until it's no more sticking on the walls of the bowl.Put the dough in the greased bowl. Pour few drops of oil on the dough,so that the dough will not dry out. Using your hands, apply the oil evenly and cover with a kitchen cloth. Let the dough rise for 30 minutes in a warm place.
  • In the meantime, take an old cloth, spread it out and lightly flour it. The cloth must be spread out in that way that you'll be able to cover the dough balls with it later. Next, oil the cutting board and your hands. Take two tablespoons of the dough and put them directly on the cutting board. Using your hand, form a smooth ball! Do not use flour, use oil!Put the rolled balls on the kitchen cloth. Put a drop of oil on the surface of each and every ball and massage it nicely. Repeat the process, until you have used up the dough. Cover with the plastic dust sheet and then with a table cloth. Let the dough balls rise for 30 minutes or until they have doubled in size.
  • Turn the preserving jar the other way round. Such that the bottom is up. Cover the bottom with a plastic film. Using a rubber ring, fasten the plastic film and oil the surface. Heat the oil in the pot and medium-low heat. Then oil your hands and take a dough ball. Using your hands pull the dough starting from the middle and going to the edges, while pulling. Next put the dough on glass, the exactly same way it was in your hands without turning it. Then keep pulling on the sides, such that the middle is thinner than the sides.
