This tangy infusion was inspired by a combination of Indian, Egyptian, and Costa Rican wisdom for soothing the common cold. Make a pot in the morning when you are not feeling well and drink throughout the day, reheating by the mugful as needed. My husband and I keep these ingredients on hand throughout the winter just because we like it. For children, add a splash of orange juice to cool it down.

Steps:
- Place honey, lemon juice, ginger, and cinnamon in a teapot or 4-cup glass measuring beaker with spout. Pour boiling water over mixture and stir well until honey is dissolved. Cover and let steep for 5 minutes. The ginger should sink to the bottom, but may be strained out while pouring into mug.

GINGER HONEY
Try this on chicken or ribs. Sweetened your favorite iced tea or lemonade. If you want to use this in cookies or cakes in place of sugar which can be partiallY replaced by sugar in some baked desserts. Honey is an acid it will not fit in every recipe. Guidelines for substituting honey in recipes. If a recipe calls for 1/2-cup sugar or less, omit the sugar and use the same amount of honey instead. One-cup honey contains 1/4-cup water. As a rule, when you replace sugar with honey, cut the liquid by 1/4 cup. When a recipe calls for one cup of sugar, use one-cup honey and reduce the liquid by 1/4 cup. Becareful when you use honey in cake and cookie recipes, prevent overbrowning by lowering your oven temperature by 25 degrees.

- Bring water to a boil, and bring honey to 185°F and keep at 185°F for 10 minutes. Remove from heat and let stand for 10 minutes. Strain while still warm. Place in sterilized jars and cap.

GINGER HONEY
This is sold in large jars in Japanese grocery stores. It is delicious in chamomile or other teas, over yogurt and would be great as a sweetener in cocktails. The honey keeps for about 2 weeks in the refrigerator or you can preserve it and store it for a longer time on the shelf. Make sure your ginger is very fresh. - Pour the honey into a small saucepan and add the ginger and other spices/flavorings if using. Over medium low heat, bring the honey to a slow and low simmer. Don't get it too hot or it will not have the right consistency. Watching the honey carefully, allow the flavors to infuse for 5-10 minutes, stirring frequently.
- Remove the honey from the heat and allow it to cool. Transfer to a container for storage and allow it to sit for about 5 days before using. (You can try using it sooner but the flavor may not be fully infused) The honey will keep for approximately 2 weeks after the 5 day waiting period.

CHICKEN GINGER AND HONEY

- Heat 2 tablespoons olive oil in a large heavy skillet over medium-high heat. Season the chicken with salt and pepper. When the oil is hot, add the chicken strips and saute until chicken is just cooked through, about 4 to 5 minutes, depending on the size of the strips. Remove the chicken from the pan and set aside.
- Add 2 more tablespoons of olive oil to the skillet and heat over medium-high heat. Add the julienned vegetables and cook until crisp tender, about 2 to 3 minutes. Season with salt and pepper, to taste. Remove the vegetables from the pan and set aside.
- Add 2 more tablespoons of olive oil to the skillet, reduce the heat to medium, and then add the fresh ginger and garlic. Cook, stirring constantly, until fragrant, about 1 to 2 minutes. Add the honey and chicken stock and let the sauce reduce slightly. Meanwhile, in a small bowl, whisk the cornstarch with 2 tablespoons cold water until dissolved. Add the cornstarch slurry to the sauce and cook for 1 to 2 minutes, or until sauce is thickened.
- When the sauce has thickened, return the chicken and vegetables to the skillet and cook until just heated through. To serve, arrange the fried noodles as a base on each plate. Spoon the chicken, vegetables, and sauce over the noodles. Garnish with the cilantro, mint, and pickled ginger.
HONEY-GINGER CHICKEN
This is different from any other honey-ginger chicken recipe I have seen on here. It has 1/3 cup hot sauce in it...so it has a little KICK! The sweet and the hot work fabulously together and always impress company! This is a favorite of mine ever since my late aunt first cooked it for me 15 years ago. Brown or white rice works well on the side...you need something to help soak up all the yummy sauce!

- Heat oven to 425. Melt Crisco and butter in 9x13 pan in oven.
- Combine flour, salt, ginger, pepper. Dredge chicken pieces in flour mixture.
- Add chicken to hot pan, skin side down. Bake for 30 minutes.
- Turn pieces over and bake an additional 15 minutes.
- Whisk together honey, hot sauce, soy sauce.
- Drain butter/fat from pan and pour honey mixture over the chicken and bake 15 more minutes, basting often.
- Serve hot, or refrigerate and serve chilled. (I prefer it hot next too some fluffy rice!).
