GINGERY TOFU RAMEN BOWLS

What is more satisfying than a big bowl of ramen noodles? This vegetarian bowl is packed with crispy tofu that brings both protein and flavor to the table after it's crisped and coating in a tamari-maple sauce. The same tamari mixture is then blended with creamy nut butter of your choice to create a silky sauce that coats the noodles.

Gingery Tofu Ramen Bowls image

Steps:

  • Halve tofu horizontally, then again crosswise. Wrap in paper towels and weigh down between two plates to release liquid, 10 minutes. Meanwhile, stir together tamari, lime juice, maple syrup, scallions, and ginger. Cook ramen in boiling water according to package instructions. Drain and run under cold water.
  • In a large bowl, whisk nut butter with half of tamari mixture; toss with ramen and set aside. Heat oil in a skillet over medium-high. Add tofu; cook, flipping once, until very crisp, 6 to 8 minutes. Transfer to a plate.
  • Discard oil in skillet and pour rest of tamari mixture to skillet. Cook until thickened slightly, 2 minutes. Return tofu to skillet; turn to coat. Slice tofu; serve over ramen with cucumbers, more scallion, chili oil, and nuts.

1 package (14 ounces) firm tofu, drained
6 tablespoons tamari or reduced-sodium soy sauce
3 to 4 tablespoons fresh lime juice (from 2 limes)
1/4 cup pure maple syrup
1/4 cup thinly sliced scallions, plus more for serving
1 tablespoon grated fresh ginger
12 ounces dried ramen noodles (seasoning packet discarded), or 10 ounces fresh
2 tablespoons creamy almond or peanut butter
3 tablespoons vegetable oil
Julienned cucumbers, chili oil, and chopped roasted almonds, for serving

Steps:

  • Crush the garlic with the back of a big knife, then put it in a saucepan with the ginger, miso, neri goma, mushrooms, stock and soy. Bring to a gentle simmer, cover and bubble for 5 mins until the ginger is soft. Strain into a clean pan and discard everything left in the strainer.
  • Meanwhile, cook the tofu. Toss it in the cornflour and heat the oil in a frying pan. Fry for a few mins on each side, being careful as you turn it that it doesn't fall apart. Cook the noodles for 1 min less than pack instructions, so they retain a little bite. Drain and leave in the pan with a little cooking water so they don't stick together.
  • Add the pak choi and whites of the spring onions to the broth and gently reheat for 1-2 mins until the greens have just wilted.
  • Divide the noodles between two deep bowls, ladle over the broth and veg. Top with the tofu, beansprouts, carrot and ginger matchsticks, green parts of the spring onions and a drizzle of sesame oil, plus the other toppings, if you like.

  • Pulse all miso paste ingredients together in a food processor until a smooth, thick paste forms. You will use about half of it for this recipe and the other half can be frozen or refrigerated for a few days.
  • Press as much moisture as you can out of the tofu using paper towels or a tofu press. Cut into cubes. In a large pot, heat the oil on medium high heat and start frying the tofu. Once the tofu has browned, add 1/4 cup of the spicy miso paste and cook for another minute or two to get a nice golden color. Remove from pan and set aside.
  • (SEE NOTES) To the same pan, add the chopped shiitake and a tablespoon or so of miso paste and stir fry until golden brown. Add the stock and soy milk and bring to a simmer. Place 1/2 cup spicy miso paste on top of a very fine sieve. Lower the sieve half-way into the simmering soup and use a spoon to slowly dissolve the paste into the soup. Discard the “solids” remaining in the sieve and let the soup simmer for another 5 minutes. Taste and adjust seasoning – add salt or a little soy sauce until it tastes like a spicy ramen broth.
  • Cook the ramen noodles according to package instructions and drain well. While the ramen is cooking, bring a small pot of water to boil. When it reaches boiling, add 4 eggs and reduce heat to the lowest possible setting. Cook for exactly 7 minutes, remove eggs from water, run under cold water, and let them set for a few minutes. Peel shells off carefully. Yolks will be soft.

  • CURRY RAMEN: Heat the oil in a large pot over medium high heat. Add the shallot and sauté for 2-3 minutes or until they turn translucent. Add the red curry paste, white miso paste, sambal oelek, garlic, ginger, brown sugar, sesame oil, and ¼ cup of water and allow the paste to cook for 4-5 minutes or until it starts to thicken. Remove 2 tablespoons of the paste to a small bowl. Add the broth and coconut milk let it come to a gentle rolling simmer before turning the heat to low and letting it simmer for 20 minutes. Prepare ingredients for bowl in the meantime.
  • TOFU: press as much water out of the tofu as you can using tea towels or paper napkins. Dice tofu into small cubes. Place in zip-top bag along with cornstarch and a pinch of salt. Zip the bag and shake until the tofu is evenly coated. Heat a skillet over medium high heat with the oil. Add the tofu pieces and cook for 4-5 minutes or until the tofu starts developing color. Add the reserved paste and stir to combine. You may need 1-2 tablespoons of water to help coat the tofu if your paste is on the thicker side. Let cook for 2-3 minutes or until paste adheres to tofu.
  • EGGS, RAMEN, VEGGIES: Prepare the ramen and the mushrooms according to package directions and divide them into serving bowls. In a medium bowl, prepare an ice bath with lots of ice and water. Heat a large pot of water to a gentle simmer. Add the bok choy and allow to cook for 30 seconds or until the greens turn more vibrant. Place bok choy in the ice bath. Remove bok choy to serving bowls when cooled. Making sure the pot of water is set to a gentle simmer, add the eggs one at a time gently lowering them with a slotted spoon. Let cook for 5-6 minutes and remove to the prepared ice bath for several minutes. Check the curry base for seasonings. If it's too thick, add more broth to preference.
  • SERVING: Ladle the soup onto the noodles, bok choy, and mushrooms. Top with tofu. Peel the eggs gently. Place the whole egg on the bowl and gently slice and open with a knife. Top with chopped cilantro, scallions, sesame seeds and oil as desired.

  • Drain water from tofu package. Slice the block of tofu into 2 rectangular planks and place on a stack of 4-5 folded paper towels, placing an additional stack of paper towels on top. Set something heavyish on top (I use a cast iron skillet) to make a make-shift tofu press for water removal. Allow to sit. I usually start my tofu about 30 minutes before I want to start cooking.
