Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Sift the flour, baking powder and salt into a medium mixing bowl. Set aside.
  • In the bowl of a stand mixer (or in a large mixing bowl using a hand mixer), add the granulated sugar, butter and brown sugar. Mix on medium speed until light and creamy, about 3 minutes. Add the honey and continue mixing for 30 seconds more to combine. Turn the machine off and add the eggs individually, mixing on low after each addition. Add the ricotta, almond extract and lemon juice and mix on medium-low speed for about 2 minutes more. The dough should look slightly granular but free of lumps.
  • Add half of the sifted dry ingredients and mix on low speed until just combined. Scrape down the sides of the bowl and add the remainder of the dry ingredients. Mix one last time on low speed until all of the ingredients are combined and the dough is fluffy.
  • Scoop the dough onto the prepared baking sheet by heaping tablespoons, making sure to leave space in between each cookie, as they will spread while baking. Sprinkle the chopped lemon peel and raw sugar over the cookies.
  • Bake until light golden on the bottom edges, about 15 minutes. Allow the cookies to cool for 5 minutes on the baking sheet before moving to a cooling rack. Repeat this process until all of the dough is baked. Once completely cooled, store the cookies in an airtight container.

2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon fine salt
1 cup granulated sugar
1/2 cup (1 stick) salted butter, softened
1/4 cup packed light brown sugar
1/4 cup honey
2 large eggs, at room temperature
One 15-ounce container ricotta cheese, at room temperature
1/2 teaspoon almond extract
2 lemons, juiced (about 1/4 cup juice)
1/2 cup crystallized lemon peel, chopped
1/4 cup raw sugar

Steps:

  • For the cookies:
  • Cream butter and confectioner's sugar with hand mixer. Stir in flour, lemon zest, limoncello, and salt until dough forms.
  • Roll into log, about 1 1/2 inches wide and 10 inches long. Wrap in plastic wrap and chill for a few hours or overnight.
  • When ready to bake, preheat oven to 350 degrees.
  • Line cookie sheet with greased parchment paper. Take golf-ball-size piece of dough and roll between palms to form a lemon shape. Flatten until dough is 1/4 inch to 1/2 inch thick.
  • Bake for 20 to 25 minutes, or until cookies just begin to brown on bottom. The dough will not expand on cookie sheet.
  • Remove from oven and cool completely.
  • For the glaze: Mix sugar and limoncello together in small bowl.
  • When cookies have cooled completely, drizzle glaze over top or spread on lightly with knife.

Steps:

  • For the cookies: Sift together the flour, baking powder and salt. In a large mixing bowl, with an electric mixer, cream the butter and sugar until light and fluffy, about 2 minutes. Add the egg and mix until combined. Gradually add the sifted dry ingredients, one spoonful at a time, until thoroughly combined. Add the vanilla. Chill the cookie dough in the refrigerator for at least 1 hour.
  • Preheat the oven to 400 degrees F. Roll out half of the dough at a time, keeping the remainder of the dough in the refrigerator. On a lightly floured surface, roll out the dough to a 1/4-inch thickness and cut into desired shapes with a cookie cutter. (For medium cookies, use a 3-inch cookie cutter.) Place the cutout cookies 2 inches apart on an ungreased cookie sheet and put the cookie sheet in the refrigerator for a few minutes before baking. This will help the cookies to retain their shape. (You can roll out the scraps to make a few more cookies.) Bake until just before the edges of the cookies start to brown, 8 to 10 minutes (if baking two sheets at a time, rotate halfway through baking). Cool the cookies for 1 to 2 minutes on the cookie sheet before removing to wire racks to cool completely.
  • For the icing: In a medium bowl, combine the confectioners' sugar, meringue powder and warm water with a wire whisk. Stir until the icing is smooth. Adjust the consistency of the icing by adding more confectioners' sugar or more water, as needed. Add food coloring, if desired, to the icing.
  • Spread the icing on the cooled cookies and then top with assorted sprinkles and candies.

2 cups all-purpose flour, plus more for dusting
2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup (1 stick) butter
1 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
One 12-ounce box confectioners' sugar
3 tablespoons meringue powder
1/3 cup warm (80 to 90 degrees F) water
Food coloring, optional
Assorted sprinkles,
colored sugar and small candy pieces
