- Peel pineapple; cut into six wedges. Cut wedges lengthwise to remove core; cut each widthwise into four pieces. Pour butter into a 2-qt. baking dish; top with pineapple. Combine the brown sugar, honey, pie spice and extract; spoon over pineapple., Bake, uncovered, at 400° for 35-40 minutes or until golden brown. Spoon cooking juices over the top. Serve warm with sorbet.

GRILLED HOISIN-GLAZED PORK CHOPS WITH PINEAPPLE SA

- Brush pineapple all over with 1 tablespoon oil and grill, covered, over hot fire until charred, about 3 minutes per side. Transfer to cutting board. Whisk hoisin and vinegar together in bowl. Transfer 3 tablespoon of hoisin mixture to small bowl and set aside. Pat chops dry with paper towels and season with salt and pepper. Brush chops all over with remaining 1/2 cup hoisin mixture. Grill chops, covered, over hot fire until well browned and meat registers 140 degrees Fahrenheit, about 3 minutes per side. Transfer chops to platter and brush with reserved hoisin mixture. Tent loosely with foil and let rest for 5 minutes. When pineapple is cool enough to handle, chop into 1/2 inch pieces and combine with scallions, cilantro, jalapeño, ginger, and remaining 1 tablespoon oil in bowl. Season with salt and pepper to taste. Serve pork with salsa.
GLAZED PINEAPPLE CHOPS
These are so fast to make. We grill them and have them with Sweet Rice and pineapple. I sometimes omit the cinnamon and dry mustard.

- Brown chops with garlic in margarine, in large skillet. Remove chops from skillet. Spoon off fat.
- Add pineapple, jelly, cinnamon and ginger to skillet. Cook, over medium heat, until jelly melts.
- Return chops to skillet; spoon sauce over chops. Reduce heat to low.
- Cover; cook 10 minutes or until chops are no longer pink. Remove chops to serving platter; keep warm.

I found this recipe on the Bull's-Eye BBQ website. Sooooooooo easy and sooooooooo yummy. I would usually just throw pork chops on the grill and put BBQ sauce on them, never again after tasing this! You can use any BBQ sauce with this recipe. It's also great on chicken!

- Mix together the drained pineapple juice, brown sugar, soy sauce, and garlic powder together in a large plastic zipper bag, and smush the bag a few times with your hands to mix the marinade and dissolve the sugar. Place the pork chops into the marinade, squeeze out any air in the bag, seal it, and refrigerate overnight. Reserve the pineapple rings.
- Preheat an outdoor grill for medium heat, and lightly oil the grate.
- Remove the chops from the marinade, shaking off excess, and grill until browned, the meat is no longer pink inside, and the meat shows good grill marks, 5 to 8 minutes per side. Brush several times with marinade and let the marinade cook onto the surface of the meat. Discard excess marinade. While the meat is grilling, place 4 pineapple rings onto the grill, and allow to cook until hot and the slices show grill marks; serve the chops topped with the grilled pineapple rings.

- Drain pineapple and reserve juice. Add water to reserved juice to make 1 cup.
- Salt and pepper pork chops to taste.
- In a small sauce pan combine pineapple juice mixed with water, brown sugar and mustard, bring to a light boil.
- Combine cornstarch with 1/4 cup water until smooth.
- Reduce heat and stir in lemon juice, Worcestershire sauce and cornstarch mixture. Simmer for 3 minutes until thick, stirring constantly.
- Brush sauce on pork chops (or chicken breasts if desired) and place on a prepared grill or in a hot grill pan.
- Brown pork chops for 4 minutes on each side, brush on more sauce and top with pineapple rings.
- Cook for 2 or 3 more minutes.
- Turn so pineapple rings are on the grill surface and get the nice grill marks, cook for 2 or 3 more minutes.
- Flip once more baste with sauce, check doneness of pork chops or chicken, if done allow to rest for five minutes and serve.
