Steps:
- Pre-heat pressure cooker on medium-high heat.
- Toss stew meat in a bowl with olive oil until the meat is well coated.
- Drop half of the meat into the hot pressure cooker and sear on all sides. Repeat for other half of the meat.
- Remove meat from the pc and set aside.
- Pour beer or ale or water into hot pc and deglaze the pot. This is very important. A lot of taste!
- Return meat to pot and put the rest of the ingredients in the pot and stir well. After stirring all ingredients should be covered in fluid. If not, add more broth or water as needed.
- Put lid on pot and bring to 15 lbs of pressure. cook for 17 minutes.
- Open using what ever method you like. You've got stew.

SIMPLE IRISH STEW
Irish stew is easy to make and if made with mutton and cooked slowly will be both flavorsome and tender. Mutton, being an older meat, has more flavor than lamb but does need to be cooked for a couple of hours over a low heat with liquid. It should not be allowed to boil or the flavor will be spoiled. The following dish will be found to be hearty and nourishing and traditional enough. Traditionally this is eaten with fresh made Irish Soda Bread. This is especially satisfying on a cold winter evening, as the smells permiate the home and fill the stomach.

- Cut the meat into good size chunks.
- Peel the vegetables and slice thickly.
- Chop the parsley.
- Choose a pot with a well-fitting lid and put in the ingredients in layers, starting and finishing with potatoes.
- Pour in the water and season to taste.
- Cover and put on a very low heat for about 2 1/2 hours until the meat is tender and the potatoes have thickened the liquid.
- The dish may also be made with lamb, in which case it requires only 1 1/2 hours cooking time.
- I prefer to make this in a crock pot and let cook all day or over night, it lets the flavors blend extra well.
- If using mutton let cook on low for 8 hours, with lamb only 5 hours will make an excellent stew.

DRUNKEN IRISH STEW

- Heat olive oil in large heavy pot over medium high heat.
- Add stew meat and saute for about 6 minutes or until brown on all sides. Add garlic cloves and saute until fragrant, or about one minute.
- Add beef broth/stock, red wine, Guinness, tomato paste, sugar, Worcestershire sauce, thyme, and bay leaves.
- Stir to combine and bring mixture to a boil.
- Once boiling, reduce heat to low.
- Cover and simmer for 1 hour.
- Stir occasionally.
- Meanwhile, in another large pot, melt butter over medium heat until slightly foaming.
- Add potatoes, celery, onion, and carrots and saute for about 15 minutes, or until golden.
- Set aside until stew has simmered for 1 hour.
- Add vegetables to beef stew and simmer uncovered until vegetables and beef are tender, about 40 minutes.
- After that time, mix 1 Tablespoon of cornstarch with 1 Tablespoon of cold water until combined.
- Slowly add to the stew, stirring for about 1 minute until thickened.
- Discard bay leaves and remove any fat that has accumulated on top. Season with salt and pepper to taste.
- Serve with a nice crusty bread and enjoy!

CROCK POT BEER & LAMB STEW (IRISH STEW)
This is a nice and simple recipe if you would like a great cheap dinner. It can be either a soup or stew depending on if you add flour and cornstarch, but as you will see in the directions you can choose to make either. Both ways taste great!

- If your Lamb Shoulder has bone, then cut the meat from the bone and chop into 1 inch cubes. Season with Salt and Pepper, then dredge with flour & add to crock pot.
- Chop Onion into large pieces, and Celery & Carrots into manageable sizes and add to the crock pot on top the lamb.
- Mix the beer and chicken stock together with the Garlic powder, Onion Powder, Rosemary, and Vinegar (if you choose to use it) then pour into crock pot over everything.
- Chop Potatoes into bite size pieces and place in crock pot and place the lid on.
- Cook on Low for 7 hours.
- After 7 hours remove some liquid and mix with cornstarch until all mixed well, then combine with the contents of the crock pot, then continue cooking on low for 1 hour.
- (for an additional flavor boost after it's done cooking go ahead and mix in some seasoned salt.).
