GLUEHWEIN
Gluehwein is a German/Austrian winter-holiday drink that most tourists know as an after-ski drink. After you come in out of the snow, it is supposed to make you glow with warmth again. Watch it: Since you drink this wine warm, the alcohol goes to your head extra quick! Drink when you really have come in, and do not have to go out again! This is the one my father used to make for New Year's Eve.

Steps:
- In a saucepan, combine the water, sugar, and cinnamon stick. Bring to a boil, reduce heat, and simmer.
- Cut the orange in half, and squeeze the juice into the simmering water. Push the cloves into the outside of the orange peel, and place peel in the simmering water. Continue simmering for 30 minutes, until thick and syrupy.
- Pour in the wine, and heat until steaming but not simmering. Remove the clove-studded orange halves. Serve hot in mugs or glasses that have been preheated in warm water (cold glasses will break.)

- Pour the wine into a large pot and set over medium heat. Let it warm up until steam rises from the surface, but do not allow it to boil. Add the cinnamon sticks, cloves, lemon juice and sugar, stirring to dissolve the sugar. Float the orange slices on the surface. Warm over medium heat for another 5 minutes, being careful not to let it come to a boil. Remove from the heat and let stand for 1 hour.
- Pour through a colander to remove to oranges and spices. Serve hot, or refrigerate and reheat gently just before serving in mugs.

Steps:
- Combine all the ingredients in a heavy, appropriately sized pot and simmer slowly, giving the mixture a good stir every few minutes.
- Do not allow to boil - this burns off the alcohol (unless you want a non-alcoholic, mulled drink.)
- Strain and scoop into glasses or mugs when ready.

GLUHWEIN (MULLED WINE)
This very easy recipe comes from Winemaker magazine. I liked it because I had all of the ingredients on hand, it is really fast, and because it warmed me up and helped alleviate the symptoms of the cold I had at the time. According to the recipe source, the mixture can be kept warm in a crockpot, or on a coffee warmer (covered) for several hours, and can be successfully reheated the next day. (Mine never lasted long enough for me to testify to the above statement.)

- Mix water, sugar, cinnamon, cloves, wine, and the juice of the orange together in a heavy pot.
- Bring up the heat, but do not boil.
- Add the orange peel and simmer 15 minutes.

- Peel a medium size orange and save the peels. Pierce the cloves into one or more of the orange peels and set aside. Extract the juice from the orange and keep aside. Optionally, you can strain it to avoid any citrus fibers in the drink.
- Turn the instant pot on Saute mode on HIGH. Add sugar and water in the Instant Pot. Bring water to a boil. Stir once to dissolve the sugar.
- Reduce the Saute setting to LOW on the Instant Pot. Add orange juice, orange peels, cinnamon, star anise, and the orange peels with cloves in it. Simmer for 2 minutes
- Add red wine and let it steam, not boil. Takes between 4-6 minutes, depending on the size of the pot.

- Combine water, orange juice, sugar, cinnamon sticks, allspice and star anise in a pot over high heat. Bring the mixture to a boil, and then reduce to a mild simmer.
- Juice the orange halves into the simmering liquid. Stud the remaining rinds with the cloves and gently place into the pot. Add juniper berries. Next, juice the lemon into the simmering liquid, and place the halves into the pot.
- Reduce the mixture to half of its original volume, add the Cabernet Sauvignon and heat until just below simmering. Ladle into glass mugs. Garnish with orange twist and cinnamon stick. Serves 8.
