GLUTEN FREE /DAIRY FREE MILLET FRUIT SCONES

These scones do justice to the subtile, slightly sweet taste of millet flour because there's no extra sugar or spices added. Despite being whole grain, their texture is pleasantly light. This recipe was inspired by Kimberly Harris' buttermilk millet drop biscuit recipe.

Gluten Free /Dairy Free Millet Fruit Scones image

Steps:

  • Preheat oven to 390.
  • Cover a baking tray with parchment paper or grease a cookie sheet.
  • Mix first four ingredients in a large bowl, stir well using a wire whisk.
  • Cut the butter into the flour with two knives until pea sized.
  • Mix soy milk, egg whites and eggs. Pour into the flour mixture and mix until smooth (I used an immersion blender).
  • Fold in dried fruits.
  • Drop in rounded spoonfuls onto tray.
  • Bake for 20 minutes, until lightly golden.
  • Serve hot.

2 cups millet flour
3 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons xanthan gum
6 tablespoons butter or 6 tablespoons dairy-free margarine
3/4 cup vanilla-flavored soymilk
2 eggs
2 egg whites
1/2 cup sweet banana chips, chopped
1/2 cup dried apricot, chopped

Light moist and so easy to make.This recipe was given to me by Irish chef. These are truly best scones I ever had. Great with butter, jam or creme-fresh. They also freeze well.

Irish Fruit Scones image

Steps:

  • Preheat oven to 375°F.
  • Line baking sheet with parchment paper.
  • In a large bowl measure flour, sugar, baking powder.
  • Add butter and work with your fingertips until mixture resembles small peas.
  • Mix in dry fruit.
  • In small bowl mix buttermilk and eggs add to dry mixture.
  • Using your hands, form dough into large ball and place on floured surface.
  • Knead lightly only few times until comes together.
  • Roll out into 1 1/2 inch thickness.
  • Cut into 3 inch rounds place on a prepared baking sheet.
  • Brush with milk to glaze.
  • Bake scones for 20-25 minutes.

Pumpkin Fruit Scones image

Steps:

  • Boil or steam 1 cup pumpkin and mash it.
  • Set aside to cool.
  • Preheat oven to 200°C.
  • Lightly flour a heavy baking sheet and set aside.
  • Place flour, sugar, baking powder, bicarb soda and salt in a food processor and whiz to mix thoroughly.
  • Add the butter& process until the mixture resembles coarse breadcrumbs.
  • (Mixing can also be done by hand by rubbing in butter with flour).
  • Transfer mix to large bowl.
  • Add the cherries, or fruit of choice and toss to mix.
  • Make well in the center.
  • Whisk together pumpkin& buttermilk and pour into the well.
  • Stir mix very lightly with a fork until thoroughly moistened.
  • Turn out onto floured surface, knead a few times to just combine.
  • Pat into a 3cm think round, dip a scone cutter or small glass into flour and cut out scones.
  • Place fairly close together on baking sheet, brush with milk for a dull glaze or egg yolk mix for shine.
  • Bake for 12-20 minutes (allows for different oven temperaments).
  • Remove from oven.
  • wrap in a tea towel for five minutes.
  • Serve hot with butter, or go the full hog and use your favourite jam topped with a dollop of cream.

Gluten Free Scones image

Steps:

  • Preheat the oven to 250°C/475°F/Gas 9.
  • Sift all the dry ingredients into a large bowl and mix well. Rub in the butter. Add the sultanas and gently mix together.
  • Lightly whisk the eggs and natural yoghurt together.
  • Make a well in the centre of the dry ingredients and add the egg and yoghurt mixture. Mix to soft dough, adding a little more natural yoghurt if necessary.
  • Turn onto a rice-floured board and knead lightly, just enough to shape into a round. Roll out to about 2.5cm/1in thick and cut out rounds using a 5.5cm/2¼in cutter. Place on a rice-floured baking sheet and brush with a little egg wash.
  • Bake for approximately 10 minutes until golden brown on top. Leave to cool on a wire rack.
  • Serve split in half with butter and jam.

Steps:

  • Mix the flour, salt, baking powder and sugar in a bowl. Rub in the vegetable spread until you have fine breadcrumbs. You can also gradually pulse it in a food processor until it resembles breadcrumbs.
  • Gradually stir the milk into the flour mixture until you have a smooth dough.
  • Lightly dust your surface with flour and gently roll out the scone dough until 2cm thick. Transfer onto a baking tray lined with parchment and put it in the fridge for 30 mins to firm up.
  • Remove the dough from the fridge and using a 7cm cutter, cut out the scones. Put them, top side down, onto another baking sheet lined with paper, leaving a 2cm gap between each one. This gives the scones an even top. Brush with the extra milk, making sure that it doesn't drip onto the sides (otherwise they will rise unevenly). Put the scones in the freezer for 15 mins. Heat the oven to 220C/200C fan/gas 7. Remove from the freezer and bake for 15-20 mins until golden brown. Serve with jam and vegan cream, if you like.

Steps:

  • Mix the flour, salt, xanthan gum, baking powder and sugar together in a bowl. Rub in the butter with your fingertips until you have fine breadcrumbs. You can also do this by gradually pulsing the mixture in a food processor until it resembles breadcrumbs.
  • Whisk together the milk and whole egg and gradually mix into the flour mixture with your hands until you have a smooth dough. Mix in the sultanas, if using. Knead briefly to come together into a ball.
  • Gently roll out the scone dough until 2cm thick. Transfer to a baking tray lined with parchment and chill for 30 mins to firm up the dough - this makes them easier to cut out.
  • Remove the dough from the fridge and, using a 5cm cutter, cut out 6-8 scones (press the offcuts together and re-roll when you need to). Put the scones upside down (this will mean you get a neater top when baked) onto another baking tray lined with baking parchment, spread 2cm apart.
  • Whisk the egg yolk and evenly brush the tops of the scones, making sure that the egg wash doesn't run down the sides of the scones otherwise they will rise unevenly. Put the scones on a tray and transfer to the freezer for 15 mins. Heat oven to 220C/200C fan/gas 7. Remove the scones from the freezer and brush the tops with the beaten egg again, then bake for 12-15 mins until golden brown. Eat just warm or cold, generously topped with jam and cream, if you like.

  • Preheat the oven to 200'C and line a baking tray with a sheet of baking paper. Set aside while you make the scone mix.
  • Add the butter and sugar to a large mixing bowl and sift in the gluten free flour, baking powder and xantham gum. Using your fingers, rub the mix together until it resembles breadcrumbs.
  • Add the milk to a jug and then crack in an egg and beat lightly until combined. Pour into the flour mix and use a wooden spoon to bring the mix together. As soon as it comes together as a dough, lightly flour the worktop and turn it out.
  • Knead the dough a couple of times to bring it together (you don't want to over-knead) then use your hands to bring the dough into a circle. Flatten using your hands (or a rolling pin) to approx 3cm thick. Using a 5cm fluted cutter, cut out 12 circles from the dough. When you run out, just roughly bring the leftovers together and flatten again - don't keep kneading in between, it doesn't matter if they're a bit rustic!
