MANGO NUT BREAD
We live on the slopes of Haleakala, where carrots, potatoes, cabbage, bananas, litchis and mangoes are grown. This is my favorite recipe using mangoes.

Steps:
- Preheat oven to 350°. In a large bowl, combine the first five ingredients. In another bowl, beat eggs, oil and vanilla. Stir into dry ingredients just until moistened. Fold in mangoes, dates and nuts (batter will be stiff). , Spoon into two greased 8x4-in. loaf pans. Bake for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

MANGO-BANANA BREAD
My Hawaiian family got me every type of fruit bread you can think of while I was in Maui. I fell in love with all of them, and now that summer is here I decided to take a shot at this bread recipe. So here is my first attempt at mango- banana bread!

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Take about 1/4 of the chopped mango and puree in a food processor or blender until it is the same consistency as mashed bananas; it should yield about 1/2 cup pureed mango. Reserve remaining chopped mango.
- Sift flour, baking soda, cinnamon, salt, and pumpkin pie spice together in a large bowl.
- Combine butter, white sugar, and brown sugar in a small bowl until blended; mix in eggs and vanilla extract. Fold into the dry ingredients until just combined. Fold in chopped mango, pureed mango, banana, coconut, and walnuts. Let sit for 10 to 15 minutes. Pour into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, 55 to 65 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 loaf pans.
- Sift flour, baking soda, cinnamon, and salt together in a large bowl; make a well in the center.
- Whisk eggs, butter, sugar, and vanilla extract together in a separate bowl. Fold mango, coconut, and walnuts into the egg mixture; pour resulting mixture into the well in the center of the flour and mix well. Pour batter into prepared loaf pans and let sit at room temperature for 20 minutes.
- Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

- 1) Preheat oven to 350 degrees.
- 2) In a large bowl combine flour, baking powder, salt (and cinnamon if added). Whisk well.
- 3) In another bowl separate the egg whites from the yolks.
- 4) With an electric beater (or by hand if you've got it in you) beat the egg whites until stiff.
- 5) Beat the yolks, adding in the oil, vanilla, and sugar.
- 6) Pour your wet yolk mixture into the flour and mix well.
- 7) Add the egg whites to the batter. Folding them in until smooth.
- 8) Mix in the mangoes and nuts into the batter.
- 9) Pour into 2 small greased loaf or cake pans.
- 10) Bake for about 1 hour or until toothpick comes out clean.

MANGO CARDAMOM ZUCCHINI BREAD (GLUTEN FREE)
I tweaked my recipe for Chocolate Zucchini Hazelnut Bread to come up with this. The orange extract and spices mask the olive oil flavor pretty well. This could also be baked in a 9 x 5 loaf pan for about 50 minutes but I haven't tried that yet. SUBSTITUTION: You can use one cup regular flour instead of the oat and soy flours.

- Smell and taste the mango to make sure it's fragrant and sweet. If the mango is not very sweet or sweet-and-sour, you may want to increase the sugar by a couple of tablespoons. (This part is a little tricky, because a very sweet mango will impart extra sweetness to the finished bread.).
- Preheat oven to 350 degrees.
- In a bowl combine and oil and eggs. Add sugar; mix.
- Stir in orange extract and zucchini.
- In a separate bowl, combine flours, baking soda, salt and spices; gradually stir into zucchini mixture to combine.
- Peel mango and cut into ½ inch dice. Drain the mango pieces well by squeezing gently and measure out about ¾ cup to 1 cup. Stir diced mango into batter.
- Add some additional sugar if desired, per the above note in the directions.
- Spray an 8-inch square pan with cooking spray.
- Pour batter into prepared pan.
- Bake about 30-35 minutes or until a knife inserted into center comes out clean.
