Gluten Free Ooey Gooey Rocky Road Bars Recipes
ROCKY ROAD BARS
These yummy chocolate bars are called rocky road because the chocolate chips, nuts and marshmallows make them lumpy and bumpy, just like a "rocky" road.

Steps:
- Heat oven to 350°. Grease bottom only of rectangular pan, 13x9x2 inches. Heat 1/2 cup of the chocolate chips and the butter in heavy 1-quart saucepan over low heat, stirring occasionally, until melted.
- Mix baking mix, sugar, vanilla, eggs and chocolate mixture; spread in pan. Bake 15 minutes.
- Sprinkle with marshmallows, nuts and remaining 1/2 cup chocolate chips. Bake 10 to 15 minutes or until marshmallows are light brown. Cool completely. Cut into about 2-inch squares.

Steps:
- Heat oven to 350°F. Make and bake brownies as directed on box, using butter, eggs and any of the pan choices-except line pan with foil, then grease foil on bottom only for easier removal. Cool completely, about 1 hour.
- Spread frosting over brownies. Sprinkle with peanuts. Refrigerate.
- In medium microwavable bowl, microwave chocolate chips and peanut butter uncovered on High 1 to 2 minutes, stirring once, until melted. Stir in cereal. Spread over frosted brownies. Cool completely before cutting, about 1 hour. Cut into 4 rows by 4 rows. Store tightly covered at room temperature.

- Add the gluten free digestive biscuits to a sealable sandwich bag and gently bash with a rolling pin - you want there to be a combination of everything from biscuit dust to lumps around the size of a 20p piece.
- Add 200g chocolate, 100g butter and the golden syrup to a large saucepan and place on a very low heat. Stirring constantly, heat until completely melted and there are no lumps of chocolate. Remove from the heat.
- Add the crushed biscuits, Crunchie chunks and mini marshmallows to the chocolate mix and stir well until completely mixed. Pour the mixture into a lined 8-inch square baking tin and push firmly down.
