GLUTEN-FREE PINWHEEL COOKIES

These soft little icebox cookies are SO cute, with a scrumptious sugar cookie and chocolate flavour.

Gluten-Free Pinwheel Cookies image

Steps:

  • Cream first amount of butter and sugar together.
  • Beat in egg, vanilla, and milk.
  • Sift flour, baking powder and salt together.
  • Add to butter mixture and mix into a ball.
  • Divide dough into 2 equal portions.
  • To one portion, add cocoa and remaining butter; mix well.
  • Roll out each portion between sheets of waxed paper to 1/8" thick.
  • Make them the same size in a rectangular shape.
  • Remov top papers and invert white layer over chocolate.
  • Remove top paper and roll, removing top paper as you roll.
  • Wrap and chill overnight.
  • To bake, slice thinly and place on an ungreased cookie sheet and bake in a preheated 375* oven for about 5 minutes.
  • Enjoy!

  • Cream the butter, brown sugar and eggs in a large mixing bowl. Continue to beat until lighter and somewhat fluffy. Slowly stir in the dry ingredients, mixing just until blended. Wrap the dough in plastic wrap and refrigerate for at least two hours, or until no longer sticky.
  • To prepare the date filling, chop the pitted dates by hand or in a small food processor. Add to water, sugar and lemon juice in a small saucepan over medium-high heat. Bring to a boil, stir then simmer for 10 minutes. Add chopped pecans, if using.
  • Once chilled, roll one-third to one-half of the cookie dough out onto a clean counter or mat floured well with Jules flour. Roll the dough into a rectangle about 12 inches long by 8-10 inches wide. Spread the date mixture on top of the rectangle, reserving enough to cover the remaining dough.

  • In the bowl of a stand mixer, whisk together the flours, starches, xanthan gum, baking powder, salt, confectioners' sugar, and granulated sugar.
  • With the paddle attachment, slowly beat in the butter until the dough starts to come together. Add the beaten egg and vanilla and mix until the dough is evenly blended.
  • Use a scale and weighed all the dough, then placed half of it back into the bowl (or eye ball it, but try to be accurate). To the dough in the bowl, add strawberry extract (or other extract, mint would be wonderful at Christmas as well) and colouring. Add 1 tablespoon rice flour and mix until well blended.
  • Roll each colour of dough out between sheets of waxed paper, until the dough is a rectangle, measuring approximately 11" x 9", and about 1/4" thick. Remove the top sheet of waxed paper from each piece of dough.
