GLUTEN-FREE VEGAN PUMPKIN SPICE DONUTS
Pumpkin spice latte season is in full force right now, and it seems to be everywhere. But most pumpkin spice products are full of artificial flavoring and mostly just sugar. I made these because I do enjoy the pumpkin spice, but I really dislike the artificial flavorings that are added. These donuts are light and airy and enjoyable with or without the icing.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C). Grease a donut pan with coconut oil.
- Sift flour, pumpkin pie spice, baking powder, baking soda, and salt together into a large bowl. Stir in almond milk, pumpkin puree, coconut sugar, olive oil, cider vinegar, and vanilla until well combined. Transfer batter to a zip-top bag.
- Snip off one corner of the bag and pipe batter into the prepared donut pan. If batter is looking a little uneven, carefully shake or tap the pan to settle it.
- Bake in the preheated oven until a toothpick inserted in the center of the donuts comes out clean, about 18 minutes. Cool in the pan for 15 minutes, then remove donuts to a wire rack and cool to room temperature, about 20 more minutes.
- Meanwhile, whisk powdered sugar, almond milk, maple syrup, and pumpkin pie spice in a bowl until smooth.
- Dip cooled donuts into the icing to coat. Refrigerate until icing has set, about 30 minutes.

- Combine all the dry ingredients in a large bowl and mix well. Then add the wet ingredients to the same bowl and mix until incorporated.
- Divide the mixture between your nonstick donut pans, enough to make 12 donuts and bake for 18 minutes, or until donuts are firm to touch. Then remove from the oven and let cool at least 15 minutes before transferring the donuts from the pan, to a cooling rack.
- While donuts are cooling, you can prepare your glaze if using. Melt the coconut oil and transfer to a shallow dish. In another shallow dish mix the cinnamon and sugar together. Then once cooled, dip your donuts (on one side onlinto the coconut oil, and then the cinnamon/sugar mixture and place back down on your cooling rack, glazed side up. Enjoy!

- Preheat the oven to 180'C and grease two 6-hole doughnut tins with a little oil - I find spray on oil or using a pastry brush is the easiest way to do this.
- Add the flour, pumpkin puree, sugar, pumpkin spice, vanilla essence, vegetable oil and gluten free oat milk to a large mixing bowl and beat with an electric whisk for around 1 minute until it forms a smooth batter.
- Place approx 1 tbsp of batter in each doughnut hole, then using a wet finger, smooth down the batter and ensure you can see the 'hole' in each tin still. Do not overfill.
- Bake the doughnuts for approx 8-10 minutes until well risen and they spring back to touch. Remove from the oven and cool on a wire rack for 5-10 minutes.
