GLUTEN-FREE VEGAN CREOLE JALAPENO HUSH PUPPIES

Gluten-Free Vegan Creole Jalapeno Hush Puppies image

Steps:

  • In a bowl combine the rice flour, cornmeal, garlic powder, cayenne, black pepper, baking powder, sea salt and jalapenos. Mix thoroughly with spoon. Add the vegan butter and 1 1/2 cups water, and mix well until the ingredients form a wet mixture.
  • For the mixture into balls, 1 tablespoon per ball.
  • Fill a tabletop deep-fryer with olive oil and heat to 350 degrees F (see Cook's Note). Fry the hush puppies in batches of 10 to 20 until light brown, 3 to 4 minutes.

2 cups brown rice flour
1 cup yellow cornmeal
1 tablespoon garlic powder
1 teaspoon cayenne
1 teaspoon freshly ground black pepper
1 teaspoon baking powder
1 teaspoon fine sea salt
4 ounces jalapeno, finely diced
4 ounces vegan butter, melted
Olive oil, for deep-frying

GLUTEN FREE(OR NOT!) HUSHPUPPIES

My daughter and I eat (mostly) wheat free. We do not have celiac disease, but both feel better when we avoid wheat. Usually this means making separate food (pasta, bread, whatever) for us. In the case of these hushpuppies, though, I can make one batch for the whole family! They are so good and no one is ever the wiser that they are eating a gluten free food! Super easy, too! If you don't need to make them wheat free just use a comparably sized regular corn bread mix and the same recipe!

Gluten Free(or not!) Hushpuppies image

Steps:

  • Heat about 1 1/2 in. of oil in heavy skillet.
  • Combine the mix, eggs, 3/4c of the milk, onion and seasoning. If batter is too dry, add enough remaining milk to completely moisten(batter should be fairly thick, though). Let batter sit for 3-4 min. until it has thickened a bit.
  • Drop tablespoon sized(or a bit smaller to yield more) bits of the dough into hot oil. Fry 1-2 min.or until first side is golden. Flip them with a fork, or slotted spoon and fry 1-2 min. more until other side is golden brown. Remove from oil with slotted spoon and drain on paper towels.
  • note: You can use 1/2-1tsp. onion powder in place of the grated onion and they still taste good!

Hush-Up Spicy Gluten-Free Hush Puppies image

Steps:

  • Preheat the oil in a deep fryer or Dutch oven to 340°F. Combine all the remaining ingredients and mix until nice and thick. Being very careful so you don't burn yourself, spoon the puppies into the hot oil, and fry for 4 to 5 minutes, turning the puppies over a few times while they are frying so they are brown on all sides.
  • Transfer to a paper bag to drain. Serve with Spicy Horseradish Sauce.

3 cups vegetable oil
2 cups cornmeal
1 cup Amy's Gluten-Free Mix
1 teaspoon baking powder
2 tablespoons sugar
1/2 cup corn kernels
1 tablespoon Cajun seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1 (10-ounce) can chunk white chicken, shredded
3/4 cup grated onion
2 cloves garlic, minced
1 small tomato, diced
2 large eggs
3/4 cup milk
1/4 teaspoon Tabasco sauce

  • Add the egg, milk, and spices. Mix until combined. Let batter sit in the refrigerator for 30 minutes.
  • Roll the batter into balls (about the size of ping pong balls), and line the air fryer basket with parchment paper. Spray the paper with oil, and place the hush puppy balls in the basket. Spray the balls with oil.
  • Cook at 380 degrees in the air fryer (lined with parchment paper) for five minutes, turn balls, spray with oil, and cook for five more minutes.
