S'MORES FUDGE BARS
Make indulgent s'mores bars with just six simple ingredients. Betty Crocker™ sugar cookie mix and graham crackers make the crust a breeze.

Steps:
- Heat oven to 375°F. In large bowl, stir cookie mix, graham cracker crumbs and melted butter until a soft dough forms. Press dough evenly into ungreased 8- or 9-inch square metal pan.
- Bake 20 to 25 minutes or until dough is set and golden brown. Cool completely, about 30 minutes.
- In 2-quart saucepan, heat chocolate chips and condensed milk over medium-low heat 10 minutes, stirring frequently, until chips are melted and mixture is thickened. Spread evenly over cooled cookie crust. Refrigerate 30 minutes or until set.
- Set oven control to broil. Sprinkle marshmallows evenly over chilled fudge filling. Broil 1 minute, rotating pan as needed until marshmallows are melted and lightly toasted. Refrigerate at least 1 hour before cutting into bars.
- For 16 bars, cut into 4 rows by 4 rows; for 20 bars, cut into 5 rows by 4 rows.

S'MORES FUDGE
Whipped this up for a birthday present and it was too excellent not to share! This is an excellent treat for your next holiday party or backyard barbecue! The amount of graham crackers and marshmallows used is based on personal preference. Feel free to experiment using more or less!

Steps:
- Line an 11x7-inch baking dish with parchment paper. Sprinkle half of the graham cracker crumbs on bottom of dish.
- Melt chocolate chips, sweetened condensed milk, butter, and vanilla extract in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching.
- Pour half of melted chocolate mixture into prepared baking dish; sprinkle about half of the miniature marshmallows over the top, covering the chocolate mixture. Repeat with the remaining chocolate mixture and graham crackers, respectively.
- Refrigerate until solid, 3 hours to overnight.

- Line an 8-in. square pan with foil and coat with cooking spray; set aside. In a small heavy saucepan over low heat, melt chocolate chips with milk; stir until smooth. I'm not sure where this recipe came from, but I've had it in my recipe collection for a while. It sounds like it would be a good sweet treat. NOTE: Cooking time is estimated.

Steps:
- Grease a 8" x 8" pan. Over "low" heat, combine chocolate and evaporated milk until chocolate melts (stir occasionally).
- Add sugar and salt. Cook to a "soft ball stage", 240* on a candy thermometer.
- Remove from heat and add the butter.
- Cool slightly, then add the marshmallows, graham cracker crumbs, nuts and vanilla mixing well.
- Press into prepared pan. Refrigerate overnight, then cut into 1" pieces.

- 1. Place butter, sugar, cocoa, and milk in a medium size sauce pan. Bring to a boil, but do not boil. Remove from heat.
- 2. Stir in Graham Cracker crumbs and nuts. Mix well.
- 3. Pour into a buttered 9 x 9 square pan. Cut into squares.

- Lightly coat an 8-inch square cake pan with cooking spray; line pan with plastic wrap, leaving a 6-inch overhang on two sides. Freeze pan at least 10 minutes.
- In a medium pot, combine corn syrup, 1/4 cup cream, butter, granulated sugar, cocoa, and pinch of salt; bring to a boil, whisking, over medium-high. Remove from heat and let fudge sauce cool. Meanwhile, remove 1 pint ice cream from freezer and let soften, about 15 minutes.
- Evenly press softened ice cream into pan. Top with a single layer of graham crackers, breaking to fit. Drizzle with 1/4 cup fudge sauce and freeze 15 minutes. Repeat twice, omitting sauce on final layer. Wrap in plastic and freeze until firm, 8 hours (or up to 3 days). Cover and refrigerate remaining fudge sauce.
- To serve, invert pan and run under tepid water to loosen cake. Invert onto a platter and remove plastic. Microwave fudge sauce in 30-second increments until pourable. Pour over cake and freeze to solidify, 5 minutes.
- In a large bowl, using a mixer, whip 1 1/2 cups cream and confectioners' sugar on high until stiff peaks form, 3 to 5 minutes. Dollop cake with whipped cream and dust with cocoa. Serve immediately.
