GRAHAM STREUSEL COFFEE CAKE
A friend gave me this recipe and it has become one of my favorites. We were camping in California and she brought us over several pieces of this delicious cake warm just out of the oven. I hope you enjoy it as much as we have.

Steps:
- 1. Heat oven at 350* bake 40-45 Min. Combine first 5 ingredients, set aside.
- 2. Prepare cake mix according to package directions. Pour half of batter into 9 x 13 x2" greased baking pan. Sprinkle with half of graham cracker mixture.
- 3. Carefully spoon remaining cake batter on top. Sprinkle with remaining graham cracker mixture. Bake until toothpick inserted comes out clean. Cool.
- 4. Combine powdered sugar and milk. Drizzle over cake. Enjoy!

Steps:
- 1. Preheat oven to 350*.
- 2. Prepare 9x13 inch pan by spraying or greasing.
- 3. In a bowl, mix graham cracker crumbs, pecans, brown sugar, cinnamon and melted butter. Set aside.
- 4. In another bowl, blend cake mix, water, oil and eggs on medium speed for 3 minutes.
- 5. Pour half of cake batter in prepared pan. Sprinkle with half of crumb mixture. Pour remaining cake batter evenly over crumb mixture. Spread remaining crumb mixture evenly over top of cake batter.
- 6. Bake for 45-50 minutes.
- 7. For a Glaze: Mix 1 1/2 cups powdered sugar with 3 tablespoons water or a little more until desired consistency. Drizzle over cake while still hot.
- 8. Serves 8 to 10

Steps:
- Streusal: Put your graham crackers in a Ziploc bag, close it and roll with rolling pin until crushed, put in large bowl.
- Add other dry ingredients.
- Melt butter pour over and mix thoroughly; set aside.
- Cake: Beat together until thoroughly mixed.
- Pour half into a greased 13 x 9 baking pan.
- Sprinkle with half of the streusel mixture.
- Carefully spread the remaining batter on top of the streusel and then top with remaining streusel.
- If using an aluminum pan bake for 45 minutes at 350°.
- If using a dark pan bake for 30-35 minutes at 350°.
- I've tried this several different ways and it actually bakes better with less brown edges in the aluminum pan for a longer time.
- Insert toothpick for final test.
- This is the only coffee cake I've ever made that tastes as good the second day or freezes well and can be served when thawed. Of course you lose the smell that a hot coffee cake right out of the oven provides.
- I usually drizzle icing on top made from powered sugar and milk.

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour, baking powder and soda; add to creamed mixture alternately with sour cream, beating well after each addition. , Spoon half of batter into a greased 10-in. tube pan. Combine topping ingredients; sprinkle half over batter. Add remaining batter and topping. , Bake at 350° for 45 minutes or until done. Cool in pan on wire rack for 10 minutes before removing from pan to cool completely. For icing, combine all ingredients until smooth; drizzle over cake.

- Set oven to 350 degrees.
- Butter a 13 x 9-inch glass baking dish.
- For the streusel; place the graham crackers in a plastic bag, seal and then roll with a rolling pin until crushed (do not crush until fine) place the crumbs in a bowl.
- Add in the brown sugar, 1/2 cup plus 3 tablespoon melted butter and cinnamon; mix until blended, then add in the pecans or walnuts; set aside.
- For the cake; in a large bowl beat all cake ingredients together until blended.
