GERMAN PANCAKE

Piping hot and puffy from the oven, this golden pancake made a pretty presentation for a skier's theme breakfast I hosted. Served with homemade buttermilk syrup, it's an eye-opening treat. Make several German pancakes if you're feeding a crowd, and keep in mind that my easy syrup tastes great on waffles and French toast, too. -Renae Moncur, Burley, Idaho

Steps:

  • Mix dry ingredients together.
  • Slowly pour and mix the milk into the dry ingredients. It will be like heavy cream.
  • Beat the eggs and add to the mixture.
  • Heat a heavy pan on medium high. Spray with oil. Ladle in 1/3 cup of crepe mix into pan and swirl to coat entire bottom of pan. Let heat about 30 seconds. Turn down heat (or remove). Use a flexible metal spatula to lift edges and then the whole pancake. Flip it over and cook until lightly browned, about a minute.
  • Turn out onto a plate. (*The first pancake is often a mess but after that they come out better).
  • Spread about 1 tablespoon of a tart jam or jelly on the pancake. Shake powdered sugar over all. Roll up and add another shake of powdered sugar. Enjoy.

  • Preheat the oven to 400 degrees F. Put two tablespoons butter in a glass 9X13-inch baking dish and pop the pan in the oven while it preheats (if it's taking a while to mix up the batter, keep an eye on the dish so the butter doesn't burn; take it out when the butter is melted).
  • Combine the eggs, milk and vanilla in a blender and process on low speed until smooth, 10-20 seconds (can also combine the ingredients in a bowl and use an electric hand mixer). Add the flour and salt and blend until just combined; the batter should be smooth but take care not to overblend or the pancakes may turn out dense and cakey.
  • Take the preheated, buttered pan out of the oven and swirl the butter to coat the bottom of the pan. Pour the batter into the pan and immediately return to the oven. Bake for 20 minutes until the pancake is puffy and lightly browned on the bottom and edges.

  • Preheat oven to 400 degrees. Whisk together milk, flour and salt until smooth. Add slightly beaten eggs and beat well. Melt the butter in a pie plate in the hot oven. When it is bubbling hot, using hot pads, tilt to cover the bottom and sides of the pie plate. Quickly pour in egg mixture and sprinkle with cinnamon.
  • Bake for 15 minutes. The sides of the pancake will rise high over the rim of the pie plate, as pictured below. (Forgive the picture quality. The steam from the oven messed with my picture.) Serve hot from the oven with Orange Sauce. Enjoy!
  • Whisk together sugar, cornstarch and salt and set aside. Combine water and orange juice concentrate in a medium saucepan over medium heat. Add dry ingredients to the saucepan. Cook, stirring constantly, until the sauce is clear and thickened. I am not the most patient of cooks, so I often raise the heat and just watch it closely. It turns out great every time.
