GRAND MARNIER COOKIE W/BERRY&CREAM/KIDNEY FRIENDLY

This is another of the wonderful recipes I found that is kidney friendly! A tasty cookie accompanied by some fresh ripe strawberries and a dollop of whipped cream. Grand Marnier Cookie w/berry&Cream/Kidney Friendly image

Steps:

  • Sift cake flour and sugar together, and then sift it again.
  • Beat egg whites until stiff, then add Grand Marnier and fold dry ingredients into the egg mixture.
  • Pipe out onto parchment paper lined cookie sheet, making 3 X 4 inch rectangles. Bake in an oven preheated to 375 degrees for about 10 to 12 minutes.
  • Remove and allow to cool. (HINT: Place in freezer to allow for easier removal from the parchment paper)
  • Grand MArnier Whipped Cream: Whip the whipping cream until it makes stiff peaks; then add powdered sugar and Grand Marnier. Beat to mix in.
  • Place a dollop of the Grand MArnier whipped cream on a plate, then put 3 strawberries next to the whipped cream and stand the cookie in the whipped cream. Enjoy!

GRAND MARNIER COOKIE
- 1/4 c cake flour
- 2 t sugar
- 3 egg whites
- 2 teasp grand marnier
MARNIER WHIPPED CREAM
- 1 c whipping cream
- 2 tablespoons powdered sugar
- 2 tablespoons grand marnier
FRUIT
- large fresh strawberries
NOTE: USE A STRAW AND POKE UP INTO THE STRAWBERRY STRIAGHT THRU FROM THE BOTTOM AND OUT THE STEM. THIS REMOVES THE STEM WITH OUT HAVING TO SLICE THE BERRY THEREFORE IT REMAINS PRETTY AND IN TACT FOR PRESENTATION : )

Mike's Grand Marnier Chocolate Chip Cookies image

Steps:

  • Cream margarine, sugars, vanilla and Grand Marnier in a large mixing bowl.
  • Add eggs, beating well after each addition.
  • Add baking soda and flour and stir until blended.
  • Stir in oats, then chocolate chips.
  • Drop by the tablespoonfuls 5 cm apart onto ungreased cookie sheets.
  • Bake at 300°F for 5-10 minutes or until done. Allow to cool somewhat before removing from cookie sheet.

2 cups all-purpose flour

1 cup quick oats (3 min variety)
2 cups semi-sweet chocolate chips

Homemade Grand Marnier image

Steps:

  • Place zest and sugar in a small bowl. Mash together with the back of a wooden spoon or a muddle. Continue until sugar is absorbed into zest.
  • Place in a container with a tight seal, preferably glass. Add cognac, stir and seal.
  • Allow to age in a cool, dark place 2 to 3 months. Shake monthly.
  • After initial aging, strain and filter. Stir with a wooden spoon to combine. Cap and age 3 months more before serving.
  • Note: Seville oranges produce the authentic taste but any type of orange peel/zest may be used with good results.

1/3 cup orange zest
1/2 cup granulated sugar
2 cups cognac or 2 cups brandy
1/2 teaspoon glycerine, for texture (optional)
