GOOD OLD MEAT PIE
A great deep dish meat pie made with potatoes, carrots and peas in a rich gravy. Lamb chicken or pork can be used in place of beef. A great recipe for leftover meat!

Steps:
- Preheat the oven to 425 degrees F (220 degrees C). On a lightly floured surface, roll the pie crust out into a 12 inch circle. Set aside.
- Melt margarine in a saucepan over medium heat. Add potato and onion, and cook until the onion is tender, but not brown. Sprinkle the flour over the mixture, and stir to blend. Season with oregano, black pepper and garlic powder. Pour in the beef broth, and add the peas, carrot and beef. Bring to a boil. Transfer the mixture to a 2 quart casserole dish, and place the pastry over the top. Cut slits for steam, and flute the edges.
- Place on a baking sheet, and bake for 25 to 30 minutes, or until crust is golden. Let stand 10 minutes before serving to thicken.

Steps:
- Preheat oven to 350 degrees.
- In large skillet, brown ground beef in large chunks, drain.
- Stir in soup, water, vegetables and seasonings. bring to a boil. Reduce heat and simmer, uncovered, 5 minutes.
- Remove from heat; stir in 1/2 cup cheese and 2/3 cup French Fried Onions.
- Pour mixture into 12 x 8 baking dish.
- Cut each biscuit in half, place, cut side down, around edge of casserole.
- Bake, uncovered, for 15 to 20 minutes or until biscuits are done.
- Top with remaining cheese and 2/3 cup French Fried Onions, bake uncovered for an additional 5 minutes or until onions are golden brown.
BEEF POT PIE III
I couldn't find a recipe for beef pot pie so I made my own, and it is great for those cold nights. This is delicious!

- In a saucepan over medium heat, brown the pieces of meat on all sides. Pour in some water to almost cover. Bring to a boil and reduce heat. Simmer until meat is tender and falls apart easily; about 2 to 3 hours. Transfer meat to a large mixing bowl. Shred the meat slightly and add salt and pepper to taste.
- In another 2 quart saucepan over medium heat, pour in beef broth and add carrots and potatoes. Cook until almost tender; about 15 to 20 minutes. Preheat oven to 350 degrees F (175 degrees C).
- When the carrots and potatoes are done, transfer to the large mixing bowl with the beef; leaving the liquid in the pan. Combine the peas with the carrots, potatoes and beef.
- Dissolve the cornstarch with the 1/3 cup of water. Pour into the saucepan of beef broth, stirring constantly. Bring to a simmer and reduce heat; cook for 5 minutes.
- Line a 9 inch pie plate with one of the pie crust following the package directions. Place the beef mixture into the pie crust. Pour the gravy over the top of the mixture, then cover with the other pie crust. Bake in a preheated oven until the crust is golden brown; about 25 minutes. Let cool for 5 minutes before serving.

Steps:
- Cook chuck roast in Dutch oven on top of stove with enough water to cover the roast, until roast is tender, usually about 2 hours. Remove meat (shred when cooled). RESERVE broth in pan.
- While beef is cooking mix flour, baking powder, and salt together. Cut in the margarine as for pie dough. Mix the beaten egg and water together and add to the flour and margarine mixture. Mix well. (If too sticky, add a bit more flour).
- Knead dough on floured surface until smooth. Let stand covered for 30 minutes.
- Roll out the dough very thin onto floured surface. Cut into squares. Put chopped potatoes in the pan with remaining broth,(you will need to add about 2 cups of water to the broth)and bring to boil. Drop squares of dough into the boiling broth. Cook over medium low heat until dough is done and potatoes are tender.

- Preheat oven according to pie crust directions.
- Season filets with salt and pepper.
- Heat 1 Tablespoon oil in 12 inch skillet over medium-high heat.
- Brown steaks on both sides, leaving centers rare, about 4 minutes total.
- Transfer to plate, let cool, then cut into ½ inch cubes.
- Add remaining tablespoon oil, onion, mushrooms, and ½ teaspoon salt to skillet.
- Return to medium heat and cook until onion is softened, about 5 minutes.
- Stir in flour and garlic and cook, stirring constantly, until flour is well blended (about 1 minute).
- Stir in wine and cook until evaporated, about 30 seconds.
- Slowly whisk in broth, tomato paste, and thyme. Bring to a simmer.
- Cover and cook over medium-low heat until thickened, 8 to 10 minutes.
- While sauce is simmering, unfold pie crust dough and place onto a nonstick baking sheet. Bake according to package directions.
- Stir peas and carrots and beef with juices into skillet.
- Continue to simmer until heated through, about 2 minutes.
- Season with salt and pepper to taste.
- When pie crust is done, carefully slide onto skillet and serve.

This old-fashioned main dish is tried-and-true comfort food. The golden crust and savory filling make such a pretty presentation. I'm a retired grandmother with 300 cookbooks and computer files filled with recipes.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in pepper and salt; remove and set aside. In the same skillet, saute the onions, carrots and parsnip in butter for 7 minutes. Add garlic; cook 2 minutes longer or until vegetables are crisp-tender. Stir in flour., Combine the broth, vinegar and mustard; gradually stir into vegetable mixture. Bring to a boil; cook and stir for 2-3 minutes or until thickened. Stir in beef mixture and 2 teaspoons rosemary; heat through. Transfer to a greased 8-in. square baking dish., On a lightly floured surface, roll pastry into a 10-in. square. MENONITE COUNTRY OLD FASHIONED BEEF POT PIE BY FREDA
I first tasted this while going thru the Menonite/amish Country. This is as Close As I can get. Not sure why they call this a pot pie, Its more likea beef stew to me, with noodles. Seems every home, just as in our Homes cooks a bit differently but with very basic ingredients. Nothing they don't have on hand.

- 1. Cook the meat in Salt & pepper Water till tender. Remove meat from the Broth. . .set aside Make Dough while Beef is Stewing in the pot. Add: Onion and parsley & frozen vegies. Bring broth to a boil. add in alternate layers, Cubed potatoes, & dough squares to boiling broth
- 2. To Make dough: Beat egg and milk. Add flour to make stiff dough. Roll out paper thin, then cut into 1" squares.
- 3. Keep Broth Boiling while adding dough squares in order to keep them from clumping & packing together. Cover and cook 20 Min. Adding more Water if Necessary to keep a good broth.
- 4. Add cooked stew meat, and stir thru the pot pie. Serves 6-8 easily with Buttered Biscuits, or Fresh baked French bread.
