GRANDMA'S APPLE DUMPLINGS
This is a simple and delicious recipe for apples wrapped in dough with an orange vanilla sauce. Don't forget the ice cream!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Wrap each apple piece in one crescent roll. Place seam side down in an 8x8 baking dish and sprinkle with cinnamon.
- In medium saucepan, combine butter, sugar, and orange juice; bring to a boil. Remove from heat and stir in vanilla. Pour over rolls.
- Bake for 30 minutes, or until pastry is golden and apples are tender. Spoon sauce over rolls when serving.

GRANDMA'S OLD FASHIONED APPLE DUMPLINGS
These apple dumplings are so good served warm with a little bit of vanilla or butter pecan ice cream. If someone you know needs a little something to make them smile, bring on a big happy face with these dumplings.

Steps:
- 1. Preheat oven to 400 degrees F (200 degrees C)
- 2. Butter 2-9x13 inch pans. I use a large (14") round cake pan.
- 3. Mix together brown sugar, cinnamon and apple pie spice and set aside.
- 4. Prepare pie crust. On a lightly floured surface, roll pastry into a large rectangle.
- 5. Peel and cut apples into quarters or halves if you prefer a larger piece of apple.
- 6. Cut pastry into squares large enough to wrap each individual apple quarter or half.
- 7. Place one apple quarter or half in center of one of the pastry cut sections. Add 1 Tablespoon of the brown sugar mixture and 1 teaspoon butter.
- 8. With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish. Dumplings can be frozen at this point.
- 9. In a saucepan, combine apple cider, water, and white corn syrup. Place over medium heat, and bring to a boil. Carefully pour over dumplings.
- 10. Bake in a preheated oven 50-60 minutes. In my oven, I bake for 60 minutes. The crust needs to be slightly golden in color. Place in dessert dishes with some sauce spooned over the top and a scoop of ice cream if you like.
- 11. TO MAKE PASTRY: 3 cups of all purpose flour 1 Cup plus 2 Tablespoons solid Crisco Shortening 12 Tablespoons (3/4 cup) of ice water 1 teaspoon of salt
- 12. Add flour and salt together. Cut Crisco into flour until crumbly. Add ice water and stir until combined.
- 13. Turn pastry dough out onto slightly floured board. Knead about 3 turns and sprinkle lightly with flour. Roll out dough into large rectangle.
OLD-FASHIONED APPLE DUMPLINGS
These are the ones my grandmother used to make: warm, flaky, apple-y sweet and drizzled with a sauce that bakes right with them. These are not difficult to make, just a little time-consuming. Serve warm with whipped cream or ice cream.

- Preheat oven to 400 degrees F (200 degrees C). Butter a 9x13 inch pan.
- On a lightly floured surface, roll pastry into a large rectangle, about 24 by 16 inches. Cut into 6 square pieces. Place an apple on each pastry square with the cored opening facing upward. Cut butter into 8 pieces. Place 1 piece of butter in the opening of each apple; reserve remaining butter for sauce. Divide brown sugar between apples, poking some inside each cored opening and the rest around the base of each apple. Sprinkle cinnamon and nutmeg over the apples.
- With slightly wet fingertips, bring one corner of pastry square up to the top of the apple, then bring the opposite corner to the top and press together. Bring up the two remaining corners, and seal. Slightly pinch the dough at the sides to completely seal in the apple. Repeat with the remaining apples. Place in prepared baking dish.
- In a saucepan, combine water, white sugar, vanilla extract and reserved butter. Place over medium heat, and bring to a boil in a large saucepan. Boil for 5 minutes, or until sugar is dissolved. Carefully pour over dumplings.
- Bake in preheated oven for 50 to 60 minutes. Place each apple dumpling in a dessert bowl, and spoon some sauce over the top.

GRANDMA'S APPLE DUMPLINGS
My grandmother is famous for this recipe which has been a family favorite for generations. She will only make it during the fall, but I have a hard time sticking to the seasonal stipulation because they are so darn good! Grandma swears that Jonathan apples are the only decent apples to use in this recipe, but any other tart apple would work just as well. Enjoy!

Steps:
- Creating the pie dough:.
- Blend flour, salt, and shortening together using a pastry cutter until the mixture is about the texture of corn meal.
- Add 1/2 cup of ice cold water and mix the dough (I find using my hands for this is easiest). If dough is too dry, add a bit more water but sparingly.
- Roll dough out on a lightly floured surface to 1/8 inch thickness. Cut into eight squares.
- Filling the dumplings:.
- Place one apple on a square of pie dough. Fill the apple with sugar, sprinkle with cinnamon, and dot with butter.
- Bring corners of pie dough to top of apple and pinch shut.
- Place finished dumplings in a 9x13 greased pan.
- Syrup:.
- Bring to boil sugar, water, and butter in a sauce pan. Boil for two minutes.
- Pour syrup mixture around the dumplings.
- Bake at 400 degrees for 40 minutes or until golden brown. Baste the dumplings with the syrup from the pan every 5 to 7 minutes.

GRANDMA SIMPSON'S APPLE DUMPLINGS

- Whisk together flour, salt, and cinnamon for crust. Cut in shortening until very crumbly. Sprinkle enough water over the mixture to just hold the dry ingredients together; mix together and form into a ball. Wrap with waxed paper and chill in the refrigerator for 20 minutes.
- Roll dough on a lightly floured surface (1/2 batch at a time) to a 1/8-inch thickness. Cut into six 7-inch squares. Reserve any extra dough for decorative garnish, if desired.
- Place one apple in the center of each square of dough.
- Combine brown sugar, cinnamon, nutmeg, and cloves in a small bowl. Divide mixture evenly between the apple cores and dot the top of each apple with 1 teaspoon butter. Bring the opposite corners of each square together at the top of each apple, pressing gently to seal the seams. Transfer to a large baking dish, making sure the dumplings do not touch.
- Preheat the oven to 500 degrees F (260 degrees C).
- Combine water, sugar, corn syrup, butter, cinnamon, and nutmeg for syrup in a pan and bring to a boil. Allow to boil for 3 minutes. Pour syrup mixture over the top of all of the dumplings.
- Bake immediately in the preheated oven until the crust begins to turn light golden brown, 5 to 7 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C) and bake, occasionally spooning hot syrup from the bottom of the pan over the top of the dumplings, until apples are tender, 30 to 35 more minutes.
- Serve warm.
