FAVORITE BAKED SPAGHETTI

This yummy baked spaghetti casserole will be requested again and again for potlucks and family gatherings. It's especially popular with my grandchildren, who just love baked spaghetti with all the cheese. -Louise Miller, Westminster, Maryland

Favorite Baked Spaghetti image

Steps:

  • Preheat oven to 350°. Cook spaghetti according to package directions for al dente. Meanwhile, in a large skillet, cook beef and onion over medium heat until beef is no longer pink and onion is tender, 6-8 minutes, breaking up beef into crumbles; drain. Stir in pasta sauce and seasoned salt; set aside., In a large bowl, whisk the eggs, Parmesan cheese and butter. Drain spaghetti; add to egg mixture and toss to coat., Place half of the spaghetti mixture in a greased 13x9-in. or 3-qt. baking dish. Top with half of the cottage cheese, meat sauce and mozzarella cheese. Repeat layers. Place baking dish on a rimmed baking sheet., Cover and bake for 40 minutes. Uncover; bake until heated through, 20-25 minutes longer. Let stand 15 minutes before serving. If desired, sprinkle with basil.

GRANDMA'S BAKED SPAGHETTI

This is my grandma's recipe, but it is too delicious to keep to myself. I used to request it for my birthday dinner every year growing up. Cozy dish for cool weather. Hope you enjoy! Note: For the cheese I go to the deli and have them cut me a hunk of cheese as close to 1 lb as possible. Better to go over than under:)

Grandma's Baked Spaghetti image

Steps:

  • 1. Brown meat and onion in a large pot. Add garlic, basil, parsley flakes, worcestershire sauce, salt and pepper, mushrooms, and tomatoes. Cook covered on low for 30 minutes.
  • 2. Preheat oven to 350 degrees. While sauce is simmering, cook spaghetti according to package directions.
  • 3. When your sauce has simmered for 30 minutes, remove from heat and add spaghetti. Mix until evenly distributed. Pour mixture in 9x13 baking dish and top with cheese
  • 4. Bake at 350 until cheese is bubbly and starting to brown. Serve with green salad. Enjoy!

1 1/2 lb ground chuck
1 med/lg onion, diced small
3/4 tsp or 1 pod garlic, minced
1 tsp basil, dried
1 Tbsp parsley flakes
1 Tbsp worcestershire sauce
salt and pepper to taste
1 can(s) 4oz mushrooms, sliced (do not drain)
1 28oz and 1 16oz can diced tomatoes (do not drain, and no crushed tomatoes)
5 servings of spaghetti, cook and drain

GRANDMA MAGGIO'S SPAGHETTI SAUCE

This is one that was recited to me out of memory alone, and described as a hand of garlic, etc., though the ingredient quantities should be accurate. I encourage buying the cheapest versions of these ingredients you can find; it will feed an army for about $15 without ruining the taste. You should add more seasonings based on preference. A great vegetarian sauce, and with meatballs...it makes great meatball sandwiches.

Grandma Maggio's Spaghetti Sauce image

Steps:

  • Heat olive oil in a large saucepan over medium-low heat, and cook and stir the onion and garlic until translucent but not browned, 6 to 7 minutes. Stir in the mushrooms and basil, and cook and stir until the basil is wilted and the mushrooms are cooked through and have given up their juices, about 10 minutes.
  • Pour in the whole peeled tomatoes, and bring the mixture to a boil, stirring and chopping the tomatoes into pieces with a spoon. Pour in the tomato sauce and stir, crushing any large pieces of tomato left, and bring to a simmer. Let the sauce simmer until slightly thickened and bubbling, stirring occasionally, about 15 minutes.
  • Stir the tomato paste into the sauce, and fill the empty tomato paste can with Merlot wine, stirring to dissolve any remaining tomato paste in the can. Pour the Merlot wine into the sauce, and stir well to combine. Bring the sauce back to a simmer, and stir in the salt, pepper, dried oregano, and sugar. Let the sauce simmer until the seasonings are blended and the sauce is heated through, about 3 more minutes.

  • Preheat oven to 350 degrees F (175 degrees C). In large skillet, cook hamburger until brown. Mix spaghetti sauce into skillet. Reduce heat and simmer.

Steps:

  • Preheat oven to 350°F.
  • Cook pasta according to package directions.
  • Drain and rinse.
  • Set aside.
  • Cook bacon until crispy.
  • Drain and crumble.
  • Set aside.
  • In large frying pan, cook ground beef, onion and bell pepper over medium heat, crumbing beef while it cooks.
  • Drain and return to pan.
  • Add canned tomatoes, soup and black pepper, and stir to heat through.
  • Add 1 cup of the cheese, crumbled bacon, and stir until cheese is melted.
  • Remove from heat.
  • Add cooked spaghetti to the sauce mixture and pour into a greased 2 quart casserole dish.
  • Bake covered for 30 minutes.
  • Remove cover, top with remaining 1 cup of cheese, and continue to bake, uncovered, for an additional 15 minutes, or until bubbly.

Grandma's Southern Mac and Cheese image

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until tender yet firm to the bite, 8 minutes. Drain.
  • Layer some of the macaroni in a 5-quart baking dish; top with a layer of Cheddar cheese. Continue layering macaroni and Cheddar cheese into the dish, ending with a Cheddar cheese layer.
  • Beat milk, eggs, and mustard together in a bowl; pour over macaroni mixture, ensuring milk mixture gets to all of the macaroni.
  • Bake in the preheated oven until cheese is melted and just before cheese around the sides gets crisp, 20 to 25 minutes. Season with black pepper.

Steps:

  • 1. . Cook spaghetti as usual, and put one layer in greased Pyrex dish 2. Spoon tomato sauce and tomato puree to evenly cover pasta 3. On top of sauce covered pasta, sprinkle half of the shredded cheese. I add fresh grated parm to the cheese mixture and I probably use too much cheese, but we like it cheesy!! 4. Put another layer of pasta on top of the cheese
  • 2. 5. Cover again with sauce and puree 6. Put the remaining cheese mixture on top 7. On top of the cheese spread a thin layer of bread crumbs which will bake into a crust 8. Put thin slices of butter on top of the cheese among the breadcrumbs (4 or 5 pieces of butter) 9. Put the dish in the oven at 350 degrees for about 50 minutes - one hour 10. When the crust forms on the pasta and turns a brownish color, take it out of the oven and let it sit for a few minutes. Have some fresh parm to sprinkle. Eat up!! Definitely not low fat, but delicious!!

  • Make the sauce: one day ahead, if possible. Drizzle some olive oil in a large pot and heat over medium. Salt the beef and add to pot along with the chopped salt pork, and brown, about 10 minutes. Add onions, garlic and a generous pinch of salt, continue cooking until onions are softened, about another 10 minutes. Add the crushed tomatoes and juices, chopped green pepper, sliced mushrooms, Worcestershire, crushed red pepper, to taste, and 2 cups water. Stir well and bring to a boil. Reduce heat to low, cover partially, and simmer 2 to 2½ hours or until meat is very tender. Cool and refrigerate overnight.
  • Assemble the spaghetti: Bring sauce to room temp or reheat gently on stove. Cook 2 pounds spaghetti in boiling, salted water until al dente, 8 or 9 minutes. Drain. In a large baking pan, put a little sauce to coat the bottom entirely. Add a layer of pasta, ladle some sauce all over the top, sprinkle on half the shredded cheddar. Repeat with another layer of spaghetti, more sauce, the rest of the cheddar. Cover cheddar with remaining spaghetti. Ladle some more sauce over the top and then sprinkle with grated Romano cheese. So here's what you have, sauce, spaghetti, sauce, cheese, spaghetti, sauce, cheese, spaghetti, sauce, Romano.
  • Cover with foil and bake in 350º oven for 45 minutes. Remove foil and bake another 15 minutes, until heated thoroughly and cheese is melted.
