CHOCOLATE CHIP BARS

People are always surprised when I tell them these chocolate chip bars come from the microwave. Chockfull of chocolate chips, the bars are especially good served with a big glass of cold milk. -Shirley A. Glaab, Hattiesburg, Mississippi

Steps:

  • In a bowl, cream butter and brown sugar. Add egg, milk and vanilla; mix well. Combine flour, baking powder and salt; add to creamed mixture. Stir in 1/2 cup chocolate chips and walnuts. Spread into a greased 8-in. square microwave-safe dish. Sprinkle with remaining chocolate chips. Microwave, uncovered, on high for 3-1/2 minutes or until bars test done, rotating a quarter turn every minute. Cool before cutting.

Steps:

  • Preheat oven to 375°.
  • In a mixing bowl, cream together the first five ingredients.
  • After creaming the first five ingredients add the last four and make sure everything is mixed together well.
  • Drop by tablespoonfuls on to cookie sheets and bake for 9-10 minutes.
  • For M&M cookies: Replace chocolate chips with M&M plain baking bits.

1 teaspoon salt

  • Melt 1/2 cup butter; add one ingredient at a time, stirring after each addition: cocoa, 1/2 cup powdered sugar, egg, 2 teaspoons vanilla, graham cracker crumbs and chopped nuts. Press into the bottom of a 13x9x2 inch pan.
  • Melt 1/4 cup butter. In a small bowl, mix cornstarch and 2 teaspoons sugar; add to the melted butter and whisk until smooth. Add half and half or milk. Cook mixture over low heat, stirring constantly until thick and smooth; cool.
  • Add 1 teaspoon vanilla and 2 cups powdered sugar to cooled mixture; whisk until smooth and thick. Pour over the bottom layer and spread evenly with an offset spatula.
  • Melt chocolate over hot water (double boiler). Spread over the cream layer. Let cool at room temperature.
