GRANDMA'S CHRISTMAS COOKIE

My Grandmother used to make these for my mother and me for years. We took it for granted that she would always be here to do so. My mother and I played with the ingredients until we think we have duplicated Grandma's recipe. The light coating of powdered sugar makes these stand out from the other cookies in the tin.

Grandma's Christmas Cookie image

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Stir the sifted flour, baking soda, cream of tartar, and salt together in a bowl.
  • Beat the margarine, butter and sugar together with an electric mixer in a large bowl until smooth. Add one egg, and continue beating until completely incorporated; add the remaining egg along with the vanilla extract, and beat on low speed until incorporated. Mix the flour mixture into the butter mixture until just incorporated. Gently mix the pecans into the dough with your hands.
  • Roll the dough into 1-inch balls; arrange onto baking sheets about 2 inches apart.
  • Bake in the preheated oven until the edges are golden-brown, 8 to 9 minutes. Allow the cookies to cool on the baking sheet for 8 minutes. Place confectioners' sugar into a bowl, and lightly dip both sides of each warm cookie into the sugar. Tap of excess, and allow cookies to finish cooling.

Steps:

  • Preheat oven to 350 degrees F.
  • In large mixing bowl or electric mixer beat; butter, egg, vanilla, and sugar.
  • Then add 2 1/2 cups of flour to mixture and mix until creamy.
  • Roll out dough on flat surface until about 1/2 inch thick.
  • Use cookie cutters of your choice to cut the dough.
  • Place the dough on a greased cookie sheet, and bake for 8-10 minutes.
  • After removing the cookies from the oven, let them cool.
  • Frosting and sprinkles are opptional but recommended by Grandma herself!
  • Enjoy!

ITALIAN RICOTTA COOKIES

Jessica Hulett's tender, cakey ricotta cookies taste like the white part of the best black and white cookie you've ever had. The recipe comes from Ms. Hulett's grandmother Dorie, who used to flavor the cookies with anise, if she used flavoring at all. Adding lemon zest gives the cookies a fragrant brightness. We approve.

Steps:

  • Using an electric mixer, cream 2 sticks butter with sugar until fluffy, about 2 minutes. Add ricotta, lemon zest and 2 1/2 teaspoons vanilla and beat well. Beat in the eggs one at a time. Scrape the sides of the bowl down with a rubber spatula, then beat in flour, baking soda and salt. Cover dough and chill for at least 2 hours and up to a week.
  • Heat oven to 350 degrees and line several cookie sheets with parchment paper or nonstick liners. Shape tablespoons of dough into balls. Place 2 inches apart on baking sheets and bake until pale golden on the bottom, about 15 minutes. Let cool on wire racks.
  • Melt remaining tablespoon butter. Whisk confectioners' sugar to break up any large lumps, then whisk in melted butter, lemon juice, remaining 1 1/2 teaspoons vanilla and enough milk to make a spreadable icing. Spread icing on cooled cookies, then let set for at least 20 minutes before serving.

  • In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. In another bowl, beat egg yolks until foamy; add milk and vanilla. Retro Tinsel Christmas Tree Cookies image

Steps:

  • Heat oven to 375°F. In medium bowl, stir cookie mix, flour, melted butter and egg until soft dough forms.
  • On floured surface, roll dough 1/4 inch thick. Cut with 3-inch tree-shaped cookie cutter; place cutouts 2 inches apart on ungreased cookie sheets.
  • Bake 7 to 9 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Cool completely, about 20 minutes.
  • In large microwavable bowl, stir 1 1/4 cups frosting and the food color until blended. Microwave uncovered 25 to 30 seconds or until warmed and thinner consistency. Dip top side of each cookie into glaze, letting excess drip off. Place cookie right side up on cooling rack placed over cookie sheet or waxed paper. Rewarm frosting mixture in microwave to maintain dipping consistency, if needed. If desired, place 1 chocolate candy on top of each tree. Let stand about 2 hours or until set. Store covered in airtight container at room temperature with waxed paper between layers.
