GRANDMA'S CHEWY OATMEAL COOKIES
"Ever since my husband's grandmother gave me this special recipe, I haven't made another oatmeal cookie recipe. The pudding mix makes them chewy," relates Donna Trumbauer of Coopersburg, Pennsylvania.

- In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the oats, flour, dry pudding mix and baking soda; gradually add to the cream mixture and mix well. , Drop by heaping tablespoonfuls 2 in. apart onto lightly greased baking sheets. Bake at 375° for 12-14 minutes or until golden brown. Remove to wire racks to cool.

- Mix milk, sugar, butter, and cocoa powder in a large saucepan and bring to a rolling boil. Boil, stirring frequently, for about 1 minute. Remove from heat and add oats, coconut, peanut butter, and vanilla. Mix thoroughly.
- Drop tablespoon-sized balls of cookie dough onto waxed paper and let cool in refrigerator for at least 1 hour.

- Preheat the oven to 400°F.
- First, mix the following together thoroughly in a blender: shortening, eggs, sugar and molasses.
- ** I find its easier to measure the molasses when hot, so I stick the bottle in the microwave for a few seconds, and heat up my metal measuring spoon on the stove (careful).
- Second, in a separate bowl, sift together the following: flour, soda, salt and cinnammon.
- After these are sifted, slowly add them to the mixer with the ingredients from the first step.
- Mix until fairly smooth, no lumps.
- Fold in the oats and raisins.
- This is pretty tough on the mixer, so unless you have a good one, you may want to do this by hand.
- To bake, drop rounded teaspoonfuls (or whatever size cookies you want) on a lightly greased baking sheet, approx 2" apart.
- I like to press the center of the cookie down a bit, so it cooks evenly.
- Cook for approximately 8 minutes.
- Notes: The cookies should be very soft, and even look un-cooked when you take them out of the oven.
- -Don't worry, let them cool, and you'll be rewarded with an amazing, chewy, tasty cookie.
- -Of course, if you prefer hard cookies, cook approx 2 minutes longer, but I recommend the chewy version.
OATMEAL COOKIES- GRANDMA'S
These are the best oatmeal cookies around. Grandma soaked the raisins before adding them to the cookies, so they taste entirely different, and much better than most. - 1. If you are using raisins place them in a small bowl and pour very hot water on them. Let them sit for at least 1 hour but not more than 3 hours. Drain them VERY WELL and then set aside. I usually put them in a paper towel lined strainer and pat them to dry well. Then follow recipe as directed. If you are using craisins simply measure them and set aside. Do not soak craisins.
- 2. In a large mixing bowl, cream shortening and sugars. Beat in eggs and vanilla. Combine the oats, flour, baking soda and salt. Gradually add to creamed mixture. Stir in walnuts and raisins or craisins.
- 3. Drop by tablespoonfuls 2 inches apart on ungreased baking sheets. Bake at 375 degrees for 10 to 12 minutes or until golden brown. Remove to wire racks to cool. Store cookies in a cookie jar with a slice of bread placed inside with them. This keeps cookies from drying out.
OATMEAL DROP COOKIES
My grandmother made this for us when I was very young. Back to the basics. No fancy ingredients, and it turns out great. She got this recipe from her mother, my great grandmother and I got it from her. My great grandmother lived to be 102 & 1/2 years old. This was one of her favorite treats that she ate often. It also brings back good memories just to make this recipe. Four generations still enjoy this.

- In medium pot mix margarine, sugar, cocoa and milk.
- Boil 1 minute (start timing when it starts to bubble).
- Remove from burner and add peanut butter, vanilla and oatmeal. Stir until thick.
- Drop by spoon onto a greased cookie sheet or wax paper.
- Let cool. Be ready to munch.
